Today I added 1/2 tsp of chipolte chili powder to the dry ingredients for my base one minute corn muffin. The result was great. The heat from the chili powder does build up as you eat the muffin. However, I find that it provides a nice counterpoint to the slightly sweet corn flavor.

I really was perplexed as to what to do with this flaxseed mill that I had purchased. Nita informed me of the OMM. I tried it with butter drizzled on top and oh my goodness. FABULOUS. I haven't eaten bread in so long and this was awesome. I cannot wait to make a cheese one with my dinner tonight. I had no idea that it would form into a muffin. That is amazing. I definately will incorporate this into my lifestyle change. Thanks everyone for all the variations on the OMM theme.

Question: I feel very filled after eating it. Is that normal?

Ophelia, it's lots of fiber, and it makes quite a large muffin, so it's not surprising that you feel full after eating it! When you need dessert, try it with a tsp of cocoa powder in it, and/or replace the butter with peanut butter. Nothing better than a choco-pnb muffin.

Thanks Nita for the response. I appreciate all your help and everyone elses. I was doing fine without bread, but every once in a while you crave it if you are a bread addict. I went to France several years ago and I just got into the baguette avec fromage (bread with cheese). I guess all is not lost.

Nita I would try your peanut butter sugestion, but it will make me crave peanuts. Don't want the tempation at the moment, but will try it after the New Year. :great:

The flaxseed muffins are also high in fat (good fats!), which is another reason the muffins are so filling. Fats tend to make us feel more satisfied and sated longer than other nutritional components. I think that's because fat is metabolized more slowly.

Hey everyone...I realize I get a good good good night sleep after a OMM. I know I can only handle one a day or every other day though. My stomach felt just too full. Too much goodness in one little muffin. I tried putting mozarella chesse and garlic powder in with the recipe last night with my pork chop dinner and it just didn't turn out right. I ended up chucking it. I'll just stick with the basic sweetened (w/ splenda) muffin. I'll venture out more later. Take care lads and lasses and have a pleasant day!!

Ophelia, try some parmesan cheese, it probably won't change the texture as much as the mozzarella does. Or, as soon as you take the muffin out of the microwave oven, sprinkle some shredded cheese on top, or split it and put cheese and butter on it. If you add frozen blueberries (one of my dh's favorites), let it cook at least another 10 seconds, maybe even 20.

When I want a savory muffin (and that's what I want more often than not these days), I omit the sweetener, increase salt, and add small shake of garlic powder. I don't put in so much garlic that I can actually taste it, just a bit gives the muffin a more savory character. And, I think Nita's suggestion about the parmesan cheese sounds great!

I've been making corn muffins just adding 2 Tbs corn bran to the basic muffin mix, and a little extra butter or coconut oil. I tried adding a Tbs of soy grits, too, and it helps give it a more cornbread texture, although I can tell it has soy in it. It's not bad with lots of butter, or soaked up in some soup or chili.

well...it wasn't all that. But there are several things I know I can do to make them better. be sure egg is better mixed, larger bowl to make it thinner, etc. So, I'll keep trying!

Heather, one thing I have found with all the variations I make is that they do better with more melted butter than the base recipe calls for. I typically use 2 Tbls and it works great. HTH

Coconut oil makes a really nice muffin, too. My husband likes his plain with thawed blueberries, or with cinnamon. My favorite is to use peanut butter for the fat, and some cocoa powder. Well, I like pnb in lots of things, even on my hamburger!

What was the problem... too dry? tough?

Did you use pre-ground flaxmeal? That might be drier than freshly ground seeds and thus call for more liquid. It's a good idea to store pre-ground flaxseeds in the frig or freezer, as it can get bitter stored at room temps (the oils in the seeds go rancid).

Or, over-cooking can cause a muffin to be a bit tough and dry. Experiment with the time as each microwave is a little different.

Hey Teelbee! It was too moist, and there were bits of egg white, not a fan of this. I mean, don't get me wrong...I ATE IT! it was a great vehicle for the butter!
and, I forgot to add the sweetner, so it was very bland. I did use pre-ground flaxmeal, and I was thankful to get that. oh, and going to put it in the frige right now!

JUST made another one, in a large square dish. folded it over and made a ham sandwich. DELISH!!
