| Where do I get the flaxseed meal? And don't say "online". I can find it online, but I'm interested to know if I can get it at my local Kroger or WalMart or Marsh. I have simply GOT to try this muffin. I used to LOVE eating bran muffins and I want want SO badly. Perhaps this will help fill that void.

| Cool. I'll go there tomorrow. Oh....wait. I bet that Jungle Jim's has it. They've got EVERYTHING there. So lucky to have that store only a few miles from where I live. DISCLAIMER....I am not promoting Jungle Jim's or advocating their site. I just thought it'd be fun to let some of you know how extensive this grocery store is, and how truly versatile their foods are. This place is HUGE (300,000 square feet), and they are truly an International Market and even have a natural foods section. Pretty dang cool.

| April, I found flaxseed meal at a Super WalMart; however, WalMart is famous for having something for awhile, and then never getting it again. You should be able to find it at a good health food store, too. I've ordered some from Netrition. It sure makes a good muffin, especially with lots of cinnamon in it.

| What a neat store, April. I'm sure you'll find some flax meal there. Lately I've been finding Bob's Red Mill brand in one of our local supermarket chains.

| Achilles, here is a link to a recipe that is very similar to the 1-minute muffin, but is made in a larger quantity and is baked in the oven: http://users3.ev1.net/~fontlady/flax...n_muffins.html I've tried it and it was very good - so good, the muffins were all eaten by the end of the night. I don't make it any more LOL But it is very similar to the 1-minute muffin, so give it a try! |

| I made my favorite version this morning. 1/2 carbquik 1/2 flax meal, 1/2 tablespoon of cocoa powder, 1/2 teaspoon cinnamon, topped with some cream cheese while it was still warm... and Austin ate HALF of it! I guess toddler-imposed portion control is better than none at all

| I can't remember if you're allowed flax on induction or not. I know that he allows psyllium husks on induction, and to me it's all the same... fiber is fiber

| Bob's Red Mill flaxseed meal say it's 4 gms carbs 4 gms fiber, so essentially 0 carbs. The only carbs in this muffin, if made with all flaxseed meal, is the little in the egg, and whatever sweetener you use, if it has carbs, unless you add other ingredients. This is a great induction food, especially if you aren't fond of eggs for breakfast. (I love eggs for lunch or supper, but just can't seem to stomach them for breakfast.)

| Oh, my God....I just made one of these muffins and it was heaven. I have FINALLY found the perfect breakfast food (coming from a non-breakfast eater), and plan to make one every morning. I put cloves and allspice and cinnamon in mine and....it was wonderful. I shared it with John, and he was astounded. I am going to show him how to make one so that he can have one whenever he wants. Now I'm going to order some of those sugar-free Davinci syrups and play around with different flavors of this muffin. The possibilities seem to be endless.

| OH Eddie you stole my idea!!!!! (great minds think alike, eh?) While I was reading this thread, I thought, "Gee, I wonder how this would be with sharp cheddar cheese and a dash of garlic salt. Might taste like the cheesy biscuits at Red Lobster." And Eddie, also, I love your idea of putting banana syrup and nuts in. Sounds like a HUMDINGER!!!!! I need to try this using flax and Atkins Bake Mix (which I ended up having to order directly from Atkins Nutritionals, locally they've STOPPED carrying it...........EVERYWHERE!!!! I do a "cake" with my mock danish in which I use Atkins Bake Mix. Who says LCers are deprived???????

| Alrighty then. I experimented with this recipe and came up with a "French Toast" flavored muffin. 1/4 c. Flaxmeal 2 TBS. Atkins Bake Mix (got mine at Atkins.com-delivered fast!!!) 2 TBS. Almond Flour 2 tsp. baking powder pinch salt 2 tsp. Cinnamon Mix all dry indgredients together Beat 2 eggs with: 1 tsp. Maple Extract 2 TBS. Vanilla s/f syrup 2 Pkts. Splenda (or more if you want it sweeter, but add more carbs, 1 per pkt) Add wet ingredients to dry and mix thoroughly. Divide the batter into 6 equal portions into the muffin cups. Let the batter sit in the muffin cups for about 10 mins to let the baking powder fluff up. Nuke it for 2 mins. Let them cool a bit. Eat with butter while still warm!!!! I used one of those new-fangled silicone muffin "tins" to cook mine in the microwave. It worked GREAT!!!! You could add nuts to this too, but remember to add carbs. Divide a quarter cup of nuts, which is one serving, and then divide the net carbs by 6 (or however many muffins you make) to figure out the total addition to the carb count of each muffin. Yields 6 muffins at 1 NET carb each. Variations: Add OTHER flavors of extracts to make different versions.
