Kizzy, I find that if the muffin seems a bit dry, adding a bit more fat helps. I like either butter or coconut oil for mine. Adding the cocoa powder probably added to the dryness. BTW, I love to make a chocolate OMM, then soften a bit of cream cheese sweetened with some Splenda or sf syrup, and split the muffin and fill it with the cream cheese. A little goes a long way, too. You can wrap it and keep it in the fridge, take it to work with you, save it for breakfast or a snack, or whatever. I also like a spice muffin filled with cream cheese.

I spent at least an hour reading this entire thread today ... i was drooling by the end .... so I did the only reasonable thing ... I went to Wal-mart got some flaxseed and made one... I put a little vanila flav. DaVinci's SF and about a tsp of cocoa powder... . I think I will try a savory on for breakfast as I have a hard time eating a lot in the morning. What a wonderful concotion... WOOT !!!

I made the muffin and thought... nasty
I tasted it and thought SWEET MOTHER'S MILK, I CAN EAT MUFFINS AGAIN!!!! I made mine with Stevia and a tablespoon of peanut butter

I saw a variation on the OMM that I made this morning to bring with me for lunch. The basic recipe is:

1 egg
1/4 c. low carb bake mix (I used Dixie Diner Bakemix)
1/4 c. flaxseed meal
1/4 c. sf syrup

Beat the egg, beat in rest of ingredients with a fork, nuke for 2 minutes (time varies with your oven). Makes a good size muffin!

This morning, I added 1 T. pure pumpkin, splash vanilla, couple dashes cinnamon, and for the syrup, I used 2 squirts each of SF DaVinci gingerbread, caramel, & sweetening syrup. It was delicious!! I made a small bit of cream cheese frosting to go along with it .. talk about a yummy lunch!

Do you add the syrup to the mix or pour it over the top? What are the carb counts for the heart smart bisquick does anyone know? Susan

Make your own lc baking mix. I'm sure the recipe is in the recipe section.

Mix the syrup right in with the muffin. I bought a biscuit-type mix from Dixie Diner on Netrition. The carb count they give is for one biscuit instead of by the tablespoon or cup, so I went by that.

OMG... this thread is what brought me to this site, and I just tasted my very first (but it sure won't be my last) OMM.

I made a chocolate version with cocoa to have for my evening snack, but didn't even get to that one yet. I also decided I should make a blueberry muffin for breakfast tomorrow, and because I have some fresh blueberries that need using up before they go bad. Of course, I wound up taste testing by gobbling up the blueberry muffin.

I didn't find it at all dry, and in fact, loved the texture. It did have a slight egg flavor, but I only used about 1 1/2 teaspoons of granulated splenda, so I think just a touch more splenda would take care of the eggy taste. I thought it should be a bit sweeter anyhow.

Thank you all for posting your own variations. This is going right into my recipe box and I suspect it's going to become a standby for me.

I tried making one with golden flax instead of regular and like it even more. Changes the flavour. I make mine 6 at a time and freeze them...too tempting to leave them sitting around.
