| Kizzy, I find that if the muffin seems a bit dry, adding a bit more fat helps. I like either butter or coconut oil for mine. Adding the cocoa powder probably added to the dryness. BTW, I love to make a chocolate OMM, then soften a bit of cream cheese sweetened with some Splenda or sf syrup, and split the muffin and fill it with the cream cheese. A little goes a long way, too. You can wrap it and keep it in the fridge, take it to work with you, save it for breakfast or a snack, or whatever. I also like a spice muffin filled with cream cheese. |
