I made the muffin using vital wheat gluten (6 gms per 1/4 cup) and just a smidgen of sweetener, and nuked it in a flat round Ziploc bowl. It came out bun shaped, and can be sliced into 3 or 4 slices - just wait until it's cool, or it will smoosh down and won't be round anymore. The texture is quite a bit like bread, and the taste is mild, so it won't overpower your sandwich fillings or toppings. If you can afford the higher carb count, it makes a pretty good bun. I don't know if it would toast; I haven't gotten that far. I'm not hungry enough to try the entire bun. Just the quarter of it was enough, warm with butter on it. I liked it.

I just made a muffin with half flaxseed and half zerocarb baking mix with 1tsp of cinnamon and 1tblsp of sf vannilla syrup and I split it in half butter it and put sf pancake syrup on it and I swear it tasted just like french toast next time I think I will try to toast it and see what happens.....I try one muffin with cajun seasoning and cheddar cheese and it was horrible...yuck..won't do that again....lol but I like experimenting but I really can't afford to try to many times....I have to try to stick with what I like thats why like to see others recipes so that they are already judged on how good they are.....sheryl

I'm so excited, I saw in my JoAnn's sale paper that they have those silicone baking pans in heart shaped muffins. I'm gonna get me one!!!!! WOOOHOO!!!!!

I love the silicone bakeware, also. I bought one 6 muffin one, but cut a third of it off, so I have 2 single muffin "tins." Since I'm the only human I cook for most days, it's nice to be able to make one muffin at a time.

Maggie, that's what I was thinking about when I picked up my "normal" sized one. It could be cut up for individual "tins." I just LOVE them!!!!!

All right, got my Netrition order today and my syrups and am having a banana nut 1 minute muffin. OK, so it's not the same, but it's close! Pretty yummy! I suggest you try it!

havent tried the pizza idea yet cher, but i might soon..
i love the idea of cutting the silicone bakeware into individual sizes..

i hadnt thought of putting syrup on and making french toast,,

so many ideas.. so little time *L*

PUMPKIN PIE ONE MINUTE MUFFIN

1/4 c. flax meal
1/2 tsp. baking powder
2 tsp. pumpkin pie spice (I like lots of spice, tweak to your taste)
2 T. Carbquick
2 T. canned pumpkin
1 egg
1 squirt gingerbread SF Davinci
2 squirts SFD vanilla

Mix all ingredients and bake as directed. Tastes great to me, being a great fan of pumpkin pie. The texture is more moist due to the pumpkin.

I picked up a silicone muffin pan at TJMaxx yesterday, makes 6. I made two muffins out of the above recipe.

I ran it through FitDay, without the Carbquick because most people probably wouldn't use it:

PUMPKIN PIE ONE MINUTE MUFFIN

Total calories: 216
Fat: 13 grams
Carbs: 17 grams
Fiber: 11 grams
Protein: 11 grams

Net carbs = 6

thanks sus! i just made a minute muffin with two thirds mags cereal mix, one third carbquik... the caramel da vinchi... and the erythritol .... the texture was nice with the carbquik..

yum stuff..

Yeah, CQ makes it fluffier and a little drier and of course, adds a few more carbs. You're loving that e-tol, aren't ya!
