"Low Carb Cooking" at Low Carb Diet Support: "I tried the clove,allspice and nutmeg for breakfast...really delicious. Used cocoa and sweet and low for an afternoon one...chocolate...reallly great just have to add 2 more carbs for the cocoa. Ordered Da vinci s/f chocolate ...."

I just love these muffins for breakfast. Cannot believe how filling they are. One of the great things is that I get an egg in when I make them. I Never eat eggs as eggs.

I made a OMM this morning with bacon, it was so good.

Mix my dry ingredients together:
1/4 c. flax meal
1/4 tsp. baking powder
tiny pinch of salt
crumbled bacon (I used Hormel Real Bacon Pieces)

Mix wet ingredients in separate bowl:
one egg
1 T. buttermilk

Pour the dry on top of the wet and mix well (I find that the flax sticks to the bowl more if it's on the bottom), then let set on counter for about 2-3 minutes so the buttermilk will activate the baking powder. Zap in the micro until puffy.

Okay, am I the only one that gains weight when I eat one of these muffins? I just love them, but both times I've had them the scale goes up. I've used the original recipe and the only thing different I've added is a bit of cheese. Darn...I really like them too.

Donna, it's purely coincidence!! It's gotta be. I eat at least 2 of these a day, and I'm losing - slowly, yes, but surely.

I love putting cocoa in mine, topping it with cream cheese and DaVinci's syrup, or whipped cream. MMMMMM.

Bacon Onion & Cheese One Minute Muffin

garlic powder

shredded cheese of your choice
thinly sliced green onions

Mix wet ingredients in separate bowl:
one egg

I buy them at Sam's. Do you have Costco or Sam's? They packages at Walmart are smaller, but a better deal than the grocery store.

Susie, what a great idea. I buy the big packages of bacon bits at Sam's or Costco too. They last me awhile, since I don't use it all that often. I keep mine in the frig. I little goes a long way. When I'm feeling better, I'm going to try ALL these variations!!!!!

Susie, your recipes sound awesome! I made the banana nut one today again, but instead of adding nuts I added a couple of squirts of almond syrup in addition to the banana syrup, and added cinnamon, nutmeg, and cloves. Yummy!

Have I mentioned in here my chocolate peanut butter creation? I don't remember . . .

Edit: ah yes, I did, way back when. I need to make that again!

Ok...I love love love this muffin! However....according to the bag this kind of flaxseed has 6 carbs per 1/4 cup! :( The brand is Specturm Essentials cold milled ground flaxseed. Now is that the problem is that its grounded and not milled? Its listing 5 carbs per 2 tablespoons (4 fiber & 1 Sugar) that equals 6 net carbs. I'm bummed that i bought the wrong kind because it was 7 bucks! :( I found this at Fred Meyer. Should I go to trader joe's? I'd rather have it equal 1 or 2 carbs instead of 7 (after adding equal). But can't wait to experiment with this some more. Very good and filling!

If it has 6 carbs and 4 are fiber, you are getting 2 net carbs. I bought Bob's Red Mill from netrition.com, the label says 4 carbs, 4 gms fiber, no sugar. Flaxseed meal should have less than one carb per 1/4 cup, I'm pretty sure. Does the label show any additives or fillers? And flaxseed shouldn't have any sugar.

You can also use almond meal, protein powder, whey or soy, or carbquik, and get a really good muffin.

I had the same question and this was Maggies response, and flaxseed should be pretty cheap considering the prices of everything else like almond flour etc...Bob's mill was like four bucks when I bought mine...good luck

ps. i love these 1 min muffins to... I make a basic one which I can either eat it with an egg ontop or make it sweet with melted butter and splenda ontop....mmmmmmmm I hope this helps

ah, as pointed out above, you subtract the grams of fiber from the grams of carbs to get net carbs. That noted, the figure still seems too high.

I often wonder myself about the accuracy of nutrition labels. Is there another ingredient added? Something they added perhaps to improve texture or decrease cakeability? I doubt that brand of flaxseed is any different, unless there is some additional ingredient added during processing that increases the carbohydrage value. FWIW, just because they have no bias (as far as I know) I tend to go with values from the government database:

from the USDA nutrition database:
Carbohydrate, by difference:

for 1 tbs whole flaxseed
2.97 g carbohydrate
2.8 g fiber

for 1 tbs ground flaxseed
2.02 g carbohydrate
1.9 g fiber

BTW, I buy whole flaxseeds for about a $1.50 a pound (at Whole Foods). They are pretty easy to grind in a coffee grinder or similar food mill. Last year, I had problems with preground flaxseed purchased off the shelf tasting bitter (due to rancidity). Now I store the whole seed in the refrigerator and grind up a cup or two at a time. The flaxseed seem to stay fresh indefinitely when refrigerated.
