Well I'm stumped...I looked at the label again and there's nothing added. Just 100% cold milled ground flaxseed. I wonder if it could have more carbs because its left in bigger pieces than perhaps milled? That's the only thing that would make sense And I checked my math and it does come out to 6 net carbs for 1/4 cup. I think I'll run over to Trader Joe's and either buy whole seed, as suggested, or try to find another brand.

PS to clarifiy the lable lists 5 carbs per 2 Tablespoons 4 of which are fiber. So, 1/4 cup equals to 12 tablespoons. There is 1 net carb per 2 tablespoons which equals 6 net carbs for 1/4 cup. So I am subtracting the fiber carbs. :(

Sarabear, there are 16 tablespoons in 1 cup. There are only 4 tablespoons in 1/4 cup. HTH

When I grind two tablespoons of flax seed, it yeilds 1/4 cup of flax meal.

I made one for my lunch today with bacon and green onion, I poked some pieces of feta into the batter. It was good. Think about a few sundried tomato and herbs.

My son came home from school craving something sweet. since he low carbs too, I whipped up a OMM with sugar free shredded natural coconut, SFD coconut syrup. Made the muffin, let it cool and then squirted some SF Davinci coconut syrup over the top. I topped it off with SF whipped cream. He loved it as did DH. Both said it's like a coconut cake.

By adding a few chopped pecans, maybe some SFD pineapple & banana syrup you could possibly have a version of Hummingbird Cake.

A carrot cake version of the OMM. Small amount of grated carrot, SFD gingerbread syrup, cinnamon, chopped pecans. Cream cheese icing. The possibilities are endless for this recipe.

I only use flax meal, baking powder and a tiny amount of buttermilk for the base recipe.

I just ate a 1MM with two squirts of my new Cookie Dough flavored syrup, added a tad more baking powder than usual, and am still sitting here in awe.

It was THAT good.

Boy...don't I feel sheepish! :-) But feel much better about the carb count in my minute muffin. Thanks for clearing that up for me. Doh!!

After reading this thread, I decided to give this a try. I'm so into these muffins! I made a batch of the mix in separate bags to have on hand. Then I can add the flavor that I want in the morning. I make my mix with 2 TB each of flax meal, almond meal and Carbquik.

My favorite is to add 1/4 tsp. banana extract and walnuts, or 1 tsp of cinnamon with pecans, or frozen blueberries with a little vanilla extract.

Over the weekend I endulged and added 1/4 of a real mashed banana and it tasted exactly like real banana nut bread!

I think I might have to go to MA (muffins anonymous)!

shelley i ALMOST used a part of banana to make one today.. but i was afraid if it didnt taste PERFECT i would be wasting carbs on it *L*

i made MINE with a TBSP of low carb peanut butter and vanilla da vinchis ... maaaaaaaaan it was yummmmy... (dont grind the flaxseed finely for this!)

I tried these for the first time the other day. Then I tried them for the second, third, fourth, fifth times...

I made one today with cocoa powder; I added a small splash, maybe a teaspoon, of cream, and it made it a bit more cakey and less eggy, I think. But that may have also had to do with the cocoa.

I'm very happy to have this recipe. Coconut oil, flax, eggs... so many healthful, legal things in one easy, tasty package! Thank you for posting it!

binki... i am right with ya with the having them for the second third fourth and fifth times *L* yummy stuff! and for a BONIFIDE breakfast SKIPPER... they really give me that quick breaky without feeling like a breaky..

i had peanutbutter (LC) in mine this morning... and added some hot coffee... makes it moist longer i have noticed, not sure why.. but it happens everytime i use it..plus gives it ANOTHER taste to add to the choices..

i also have taken to puttin the mixture in a bowl, then flip it over onto a plate and slice like a little mini cake .. i get SEVERAL small pieces to munch on with my coffee.. quite decadent! comes out looking like a mini bunt cake (that isnt spelled right i am sure..)

i put it on a fancy little desert plate, and its SOOOOOOOOO unDIET !

I made six of them today with some low sugar choc. chips and peanut butter. I ate one and a half with butter. Tomorrow, I think I'll slather some of my organic PB on them to get even MORE PB taste!!! YUM!!!!
