kim-i've been putting about 1/4 t. of banana extract in mine, and since it's been a year or two since i've had actual banana bread, it tasted exactly right to me! the texture from the flaxseed is good for this. i add a little spice, like allspice, cinamon or pumpkin pie spice, use some davinci's french vanilla like vanilla extract, and a little extra sweetener since bananas are fairly sweet, voila! it was a perfect breakfast. felt like i was going illegal!

oh man! dont i know it dix! it is just like the muffin i have missed since LCing... great stuff.. and being able to make it so MANY ways its GREAT..

only problem i have is that it is so filling... that i skip the veggies..
gonna have to limit it to once in the day i think.. the TWICE has me not eating all that i SHOULD be eating..

hmmmm unless i put some veggies in it..

YUCK..
naw... aint gonna happen *L*

After seeing this recipe and hearing others rave about the one minute muffin, I had to finally try it. I must say it is much better than I imagined it would be! It's almost too good to be true. So far I've had it plain, with peanut butter, PB and cocoa, pumpkin pie spice, and brown sugar-twin with cinnamon. This is a wonderful snack! I can't wait to decide how I'm going to make my next one.

Are the dried cranberries sweetened? That does sound good! With nuts! I'll have to try the PB. I love PB!

Who makes the low sugar chocolate chips? What are they sweetened with?

shelly, HENRY said that he has found some, but all I can find in the stores i have been in are SWEETENED dried one...
i plan on looking when i go to TOWN tomorrow..(more store choices)

the LC chunky peanutbutter makes a nice NUT muffin...if you add banana syrup i am sure it would make a great banana nut that way..

How do you make the muffin with Maggie's cereal? Do you just add 1/4 tsp baking powder and 1 egg to 1/4 cup cereal mix?

That sure would make it a lot easier!

Kim - I had a muffin today with sf banana syrup and chunky natural pb - added cinnamon, cloves, ginger, and nutmeg - it tasted just like a banana nut muffin only better! I've never had a peanut butter banana muffin before - this was kind of like a peanut butter and banana sandwich. It was soooooo good!

The cranberry one sounds awesome as well! Bet it would be good with sf orange syrup added.

Shelley (LG) the main recipe is on the first page of this thread. You can mouse over it holding your left mouse button down and then right click on it (after all the words are highlighted, hit copy and then go to a Word doc page and paste it and print it out (if you are so puter inclined)

I bought a Ghirardelli bag of bittersweet chips at Sam's Club (since they don't sell baking chocolate, grrrrrrr) and use about 5 chips per muffin. There's 7 carbs per 16 chips, so if you used 5 or so (they're BIG) it would be approx 5 carbs extra. Count accordingly if you use them. They DO contain a bit of sugar. So be cautious if you do use them. Lindt also makes a chocolate bar that is 70% cocoa, and is 4.5 carbs per half a bar. I will use that on occasion too, broken into pieces.

Kim, I've used small amounts of Craisins (Ocean Spray) on occasion. You could use a few and I don't think the carb count is HUGE. (I don't have a bag on hand to check the label for ya) I wouldn't eat a handful of those ruby gems, but a few to flavor a muffin prolly wouldn't hurt. I DON'T think they sweeten them, but they are dried and dried fruit concentrates the fruit sugar which seems to bring out their sweetness. What about using regular cranberries, the whole unaltered berry? They would add a nice tart zing to any OMM.

Rhonda, I ordered mine through Netrition. They carry all the DaVinci syrups at a reasonable price, plus all the other lc goodies and stuff I need. AND they have a low, flat shipping rate. I really like them! www.netrition.com
