I made mine this morning with peanut butter, some Carbsense chocolate hot cereal, a little Walden Farms chocolate sauce. Oh, boy, it was like eating a huge chunk of chocolate cake. I could barely get through it, and it was divine! I love chocolate and pnb together.

Here's a little word of caution: Craisins are LOADED with sugar, and high in carbs. A quarter cup has 33 grams carbs, 2 grams fiber, and 26 grams of sugar. That works out to about 7.5 carbs per tablespoon. I could see the carb count, but all that sugar...I dunno.
If anyone has a dehydrator, maybe there is a way to make dried cranberries with sweetener? Maybe oven dry them? I do it with tomatoes in my oven, so maybe there is a way. I haven't found unsweetened cranberries anywhere, either, so this would be cool.

Trina, thanks for the counts. I knew they were high. I suppose fresh cranberries could work. They certainly would add a tart zing!!!!

Trina, yeah, I notice that even most of Trader Joes dried fruits have ~added~ sugar. Is that crazy or what? We used to dry fruit at home when I grew up and it ~never~ would have occurred to us to add sugar to dried fruit. (Aside, when I was a kid, Silicon Valley was mainly orchards and prided itself on being "The Prune Capital of the World", LOL.)

For those of you who want a berry kick in a muffin or pancakes, TJ's frozen mixed berries don't have added sugar. A few frozen berries can be a fun addition for about 2 more net carb per 1/8 cup of fruit.

Convection ovens make good dehydraters, if you set the oven to convection bake on low (150 to 200F), and keep the door cracked open an inch (I prop the door open with a bit eraser). Convection mode speeds up the drying, but I doubt that it's strictly necessary.

Thanks for the info Eddie..... I REALLY need to order some Carbquik there since I have been out of my cheapie Carbsense stuff I bought at Walmart last year for months. Off to Netrition I go!

My DH has a food dehydrator, and I have 2 bags of cranberries in the freezer. I'm gonna try drying them, and I'll let y'all know what happens. I don't think I'll try to sweeten them, though. I can't think how it would work without changing the texture of the fruit, unless I soak them for a short time in some simple syrup made with Splenda. Hmmmmmm. The old brain has to do some thinking here.

henry said (in the five veggies and fruit thread) that he gets the unsweetened cranberries off of a salad bar at a store...(you would HAVE to ask the mgr if they truly ARE unsweetened... )
otherwise, the dehydrating some might work too..

shelly,i make MY mags cereal with CARBSENSE mix, and it already HAS the baking powderin it ,i dont think ya can buy it anymore..) so i just add the flaxseed and wheat bran to it.... so if you DONT use carbsense as the base, i guess you would add the baking powder,, although i am not sure of how much..
i used ATKINS bake mix the same way when i had it..

Remember the broccoli bread...

Made a great new version of the OMM. Chopped some steamed brussel sprouts, added some parmesan cheese, a bit of minced onion and a shake of garlic powder. Threw that in with the flax meal, baking powder, egg and buttermilk. Zapped in the micro. Who else is willing to try it?
