| I DID NOT invent this. I found it in another thread, listed under "coconut oil and flaxseed", originally posted by Jessicat on 11/8/05, and this recipe was posted by teelbee. I will not take credit for it; however, I mention it often in my journal because it has become a regular part of my routine, having one for breakfast nearly everyday. The variations are limited only by your imagination. I must say thanks to teelbee for this. Many people ask what the 1-minute muffin is, so I figure it's easiest to put it here. I have cut and pasted it right out of the original post: 1-Minute Muffin In a tea cup, Melt 1 or 2 tsp of butter or coconut oil (microwave for 5-10 seconds*) Mix in 1/4 cup of flaxseed meal (and/or mix with almond meal, protein powder) 1/4 tsp of baking powder 1 egg Sweetener to taste (i.e., 1-2 packets of Splenda or 1 TBS of SF syrup) Microwave on high for 1 minute* Turn out and let cool The muffin may look kind of wet at first, but it dries quickly as it cools. Eat warm with butter or wrap cooled muffin in plastic to eat later. *cooking time may vary depending on your microwave, avoid overcooking There, now it's posted, so if anyone else asks about it, I'll tell them to look it up. | I make this with half flaxseed meal and half carbquick. It's awesome. I've also done it with 1/2 tablespoon of cocoa powder and 1/2 teaspoon of cinnamon added. I like to use different DaVinci syrups to change up the flavors

| Just my two cents here - I LOVE the 1-minute muffin! I think I love it so much because it is so versatile. If you leave the sweetener out, you have a perfect hamburger bun. If you add spices, you have savory "bread" to go with a meal (split it, toast it, spread with butter, sprinkle on some parmesan and garlic powder and you have garlic cheese bread). Add different flavors of syrups and spices such as cinnamon, nutmeg, cloves, pumpkin pie spice, etc., and you have breakfast or dessert. My favorite so far is to melt about a tablespoon of natural chunky peanut butter along with the butter, and add the other ingredients along with some unsweetened cocoa, and voila, peanut butter chocolate cake. There are just so many variations you can use, it's almost impossible to become bored. Next, I want to get some gingerbread sf syrup (I think you can order that?) and see if I can make "gingerbread." Yum! Moderators: maybe this post/recipe could be made a sticky like the mock danish recipe? |

| You can get gingerbread syrup. If my bestfriend ever mails my 2 cases of DaVinci's that she bought for my birthday, there's gingerbread syrup in there

| Hey, pssst, Eddie.......check out the Netrition website and knock yourself out with all of the flavors you can get with sugar-free syrups. Yep. Gingerbread is there (and my personal favorite....cookie dough!).

| Cool! I think having this as a sticky is a great idea, because this recipe really is very handy and useful for newbies and veterans alike! And yay for the sf gingerbread syrup! I can taste the gingerbread now . . . |

| Using butter and truly carb free sweetener, such as liquid splenda or DaVinci syrup: 239 Calories 19 gms fat 18 gms carbs 17 gms fiber Resulting in 1 net gm carbs. If using powdered splenda, add 1 -2 gms of carbs, depending on how much used. HTH

| I tried this today & it was so good!! Love it... I added Davinci carmel syrup. I'm thinking that imitation honey would be oh so good. The problem with this one is that I could get carried away and end up eating way to many : ) Had 3 of them just today..Did I just admit that ....I'm excited about trying different add ins

| All right, tonight, I made this to go with my steak and veggies. I added some garlic powder and cheddar cheese. Made a very nice cheese biscuit! Have I mentioned I love this muffin? |

| My favorite thing about this is that it's a SINGLE SERVING. I make it in my 1 cup pyrex measuring cup and since that is then dirty... it keeps me from making too many of them. I did make this for DH one morning, and he said he liked it... but he hasn't asked me to make it again. I think I need to work on this and keep tweaking it to find a flavor that he'll like better.

| My favorite thing is the low cleanup effort - 1 dish, 1 fork! It's good to hear that so many people find this recipe to be useful. I didn't invent it so much as tweak it from concepts in 2 earlier recipes - the famous 3-minute chocolate cake (originally posted by Rob, I think?) and BettyR's Carbquik hamburger bun. Alas, carbquik seems to give me gas, so I had to look for a different base meal for the bun. I definitely have to try some of these new ideas for it soon! :cook:

| All right, had another brainstorm for this while in a thread talking about zucchini bread. I betcha if you flavored this with some banana sf syrup and stirred in a few nuts, it would make a nice banana nut muffin. I've been missing banana nut bread - used to make it weekly - and I bet this would be a workable substitute. I am going to have to give it a try now as soon as I get some syrup! |
