Henry, rutabagas are great potato substitutes in soups. The trick is to not overcook them. If they are mushy, they are nasty. With a little "tooth", they are good.

Susie, I prefer to steam all my veggies. I prepare the sprouts for cooking just like everyone else said, trimming off the hard stem end, pulling off brown leaves. They are so good steamed. I bought some a few weeks back, and I wish I had gotten more. Frozen are ok, but fresh are to die for.

I can't handle lima beans, or black eyed peas (they taste like dirt). And I'm willing to try any veggie once, as long as it doesn't smell awful. I've even gotten to where I can tolerate cooked mushrooms; used to only like raw in a salad.

I used to be able to buy brussels sprouts on the stalk - they looked ~so~ funny like a green baseball bat covered with knobs, which were the sprouts. Just slice off what you need for a meal and put the stalk back in the frig. The great thing about buying them that way was they stayed fresh forever in the refrigerator.

I used to just nuke them and add butter and salt. But, now I prefer to roast them, as noted above in this thread.

I note that brussels sprouts can become rather odiferous if you save cooked leftovers. Onced cooked, they get off flavors pretty fast, it seems. I've never tried frozen ones, but its easy to imagine the same smell/flavor change happens with freezing.

PS... add me to the roll of beet haters - might as well gag me with a spoon. Lima beans are pretty awful, too; however, you can swallow them without chewing. That was the one redeeming feature when I was a kid and hated lima beans.

I've found that how veggies were prepared when you were a child is a pretty good predicter of whether or not you're willing eat them growing up. I was lucky to have a mother who was a very good cook when it came to veggies (mostly fresh and many homegrown). The few that I don't care for like green pepper and summer squash, I simply don't like no matter how well prepared.

DH's mom was the opposite. He hated brussels sprouts because she served canned ones (is there even such a thing? Ugh!) and boiled the heck out of them first. The same with asparagus. He eats alot of different veggies now that he never did before because he's come to realize that there is a world of difference between fresh, correctly prepared and seasoned veggies and the horrors that appeared on his childhood dinner plate.

Teelbee, you're from Silicon Valley? I grew up in Santa Cruz . . . we used to get our brussels sprouts the same way. They're so readily available because they're grown just right there. We had them all the time. That's probably why I hate them so much . . . I love most vegetables but the BS and beets are about the only ones I truly hate.

Oh how I wish my DH would believe this and open his mind a little about what he's willing to eat! He'll eat green beans, broccoli, and corn (which i don't even consider to really be a veggie!)...he won't even try anything else. i keep telling him that good fresh veggies taste NOTHING like the yucky, nasty, slimey things our moms tried to make us eat!

I'm thankful that my Mom was such a good cook and insisted we at least TRY everything once. There aren't many veggies I dislike, although zucchini cooked with tomato sauce is one that I really could pass on forever! Zucchini any OTHER way is good though!

I love beets and wish they were lower in carbs. They are marvelous roasted, but I usually steam them, and when they are almost done, throw the greens on top and let them cook. All they need is butter and salt.

We used to raid the pea patch when we were kids, and eat the tiny little early peas raw right out of the shell. They were so good and sweet! Jicama reminds me of those peas.

My next veggie adventure is to try some greens that I have never tried. And I'm going to look hard for some really good fresh brussels sprouts!

LOL, Char, I think my mom had that very same recipe and it's probably the reason why I loathe zucchini so much. Well, that and it's "squashy" flavor which I just can't abide. I have found, however, that young squash sliced paper thin and sauteed in bacon grease is more palatable because the bacon grease tends to eliminate the squashiness. Saute it in olive oil, on the other hand, and I don't even want to be in the same room with it!

Yep, Esther, I know what you mean! I like it the way you described, OR cut on the diagonal in 1/4" or so slices and oven-roasted, OR paper-thin and in salad, raw. Otherwise - eh - there are BETTER veggies! LOL!

That stuff cooked with tomatoes tastes like metal to me. UGH. And the texture...

i didnt like beets as a child... (dad made some stew once and threw a can in... NOTHIN like trying to figure out why your stew looks like blood with meat floating in it...)
but i like em now.. pickled kind.. sliced over salad or just the tiny baby ones cut in half ..yum

i hated asparagas.. always soggy and nasty.. but i LOVE it now... crisp and green... yum..or better YET i love them PICKLED with HOT SPICY stuff..

how bout okra yall? not big on it in gumbo or whatever when they are nasty slimy.. but ALSO pickled in hot spicy stuff they are to die for and coated with corn meal (ohmyGAWD i am going to have to get nitas corn bran for THOSE!!!) and fried in a pan till realllllllllllly crunchy are amazing!

hominy AAAAAAAAAAAAAAAAAAGHHHHHHHHHHHHHHH sooner take a bullet to my head

think i could use eds recipe for BS on those babies..

Sheesh, I just saw this thread. I only read the last page, so if I repeat anything, I beg your forgiveness. I LOVE brussel sprouts, anyway, shape or form. Fresh is awesome. I've even grown them, pretty easy here in zone 5.

Vickie, my DH is about the same as your DH with the veggies, although he DOES like BS's. He THINKS he's pretty open on the veggie front, HAH!!!!! NOT. But he will eat his non-faves without griping. (He just won't take seconds.)

I like all of the above mentioned veggies except the ones you listed Kim, I'm right there with ya. And THAT'S okay!!!! They're pretty high carb anyway. So no big loss. LOLOL

Oh, yeah! Santa Cruz is a beautiful place. I grew up in the foothills around Los Gatos and Saratoga (still mainly orchards way back then). We loved to go to Santa Cruz. It was a 30-minute drive over the hill to Santa Cruz, and we did it almost daily in the summer. I remember one hairy ride as a teenager (trying to beat it home before a curfew); we made it from the Catalyst to Saratoga in about 18 minutes!

Indeed, after we were grown, my mom moved to Santa Cruz for several years - she worked at Dominican Hospital. But, then she moved back over the hill to be closer to us "kids".

Do you hate artichokes, too? (that's another great coastal veggie).

Another brussell sprout hater here, same goes for lima beans and beets.

Nita, an awesome green veggie to try is rapine (broccoli rabi). I like it best sauteed with olive oil and garlic but bacon goes great as well. I often sautee it with my breakfast bacon and eggs. Some people like it only after it has been boiled because it can be a little bitter. Me, I like the bite.
