Don' laugh you guys...
I have never prepared "fresh" brussel sprouts, it's always been the frozen ones.

Bought some great looking fresh ones today, please tell me your favorite way to prepare these babies! Don't want to waste four bucks experimenting.

Eddie's gonna love this thread Susie! Here's how I make fresh ones......
  1. Remove all the dead outer leaves
  2. Trim off any hard part of the stalk
  3. Cut a deep ?X? in the base all the way through to the middle
  4. Plunge into boiling, salted water
  5. Bring back to the boil and simmer until soft (pierce the thickest part with a pointed knife to test if they are soft and cooked all the way through)
  6. Strain and toss in a little melted butter with one of the following:

  • finely sliced garlic
  • grated fresh ginger
  • tarragon
  • carraway seeds
  • black mustard seeds
  • garam masala
  • chopped fresh, red chili
  • finely chopped onion and bacon bits

My favorite way is to slice a bit off the base, to get down to the fresh stuff, pull off any dead outer leaves, cut in half, "longwise" right through the core so they don't come apart. Then roast or sautee till done. (I like a little brown on them. Seems to make them sweet.) I don't add much more to them than some salt & pepper and olive oil or butter (or a bit of both.)

Be careful! These are addictive!

Susie, here is the perfect way to prepare fresh brussels sprouts:

1) Pick up plastic bag filled with brussels sprouts
2) Walk to trash can
3) Dump brussels sprouts in trash can
4) Vow never to purchase brussels sprouts again.

ACK! And it's funny that y'all thought of me! I guess I've been just a little vocal about my dislike of this disgusting vegetable LOL

2 ways I love!

Wash and halve, discarding any crummy-looking outer leaves. Plunk 'em into a microwave-safe vessel. Add maybe 2 tablespoons of water. Cover and cook on High about 5 minutes, until they look very bright green and are JUST BARELY getting tender. Drain off all the water; add 2-3 tablespoons of good-quality olive oil. Shake to coat them all. Pour out onto a foil-lined baking sheet, and scoot 'em around into a single layer. Sprinkle with garlic salt and pop them into a preheated 425* oven. Cook 10 minutes or so, stir, cook until you are getting some good browning going on. Serve when done to your liking. This is the ONLY WAY I could get DH to try B. sprouts! He had eaten them before cooked to death in water. YUCK.

The other good way is a Bobby Flay recipe - chop some pancetta or bacon, throw into a big skillet, and cook til browned. Scoop out the bacon bits. Put it halved B. sprouts. Stir to coat with the bacon fat; cook til getting browned. Add back in the bacon bits and serve. You can also add some minced garlic but don't do it til close to the end or it will burn.

YUM YUM, I love sprouts! So does DH now. We can eat a whole panful between the two of us!

Thanks for the tips everyone...I'm like Susie...usually just have the frozen ones around, so now I'll try my hand at roasting some fresh sprouts...yum.

Eddie, my anti-sprout soulmate!! I like your method of preparing those little bundles of gross, but you forgot one step: stomp on the bag on the way to the trash can.
Sorry, Susie, not a fan. I love most veggies, but there are three I hate: the aforementioned dreaded BS, lima beans and beets. Bleeecchh.

Nope, nope, nope . . . not gonna eat them roasted, not gonna eat them toasted. I will not eat them in my room. I will not eat them with a spoon. Or however Green Eggs 'N Ham goes . . .

Trina, yes my dear, I forgot that part. And I hate beets too!!! Lima beans aren't my favorite but I can take them if I have to. They can't make us like brussels sprouts!!!!
