| Low carb berry bread pudding 6 slices low carb bread 3 cups carb countdown milk,(or mix with half heavy cream, or use 1 %) 5 large eggs 3 tsp. vanilla 1/2 cup splenda margarine, or butter 1 cup berries, ( I used blueberries, but wish I had blackberrys) pinch of salt nutmeg Spread bread slices with margarine or butter, and slice into cubes. Lay evenly in a glass baking dish. Mix milk, eggs, vanilla, splenda, salt and nutmeg and pour over bread. Allow to soak in for 10 minutes. Toss in berries, sprinkle top with nutmeg, and bake in water bath at 350-% until knife inserted in center comeas out clean, approximately one hour. Serve warm and top with whip cream.

| Oh man - I must try this with those Trader Joe's frozen mixed berries - there are raspberries, blueberries, and marionberries all in the same bag. This sounds DIVINE!! Char

| I tried this yesterday, and both of use loved it.. I want to try blackberrys but didn't have any... blue berry was yummy tho! And I dropped two pounds... yippeee!!
