Default Almond Muffins

These muffins are really good and easy to make. If my counts are right, they come out to about 4 carbs per muffin.

I sometimes add blueberries by dropping some frozen berries onto of the raw muffins in the tins and poking them down into the batter with my finger.

Almond Muffins

2 cups almond flour
2/3 cup Carbquik
3 teaspoons baking powder
dash salt
1/4 cup Erythritol
3/4 cup Splenda or liquid equivalent
1/3 cup melted butter
2 eggs
1 tablespoon vanilla
1/2 cup cream
1/2 cup Davinci SF vanilla syrup

Preheat oven to 325?

Place dry ingredients into a mixing bowl and add the wet ingredients. Stir until mixed through.

Divide batter evenly between 12 paper lined muffin tin cups.

Bake at 325? for 20 to 25 minutes or until toothpick inserted into middle of a muffin comes out clean.

Yea, I've been pretty busy. Haven't had much time to spend on the net.

We bought a new house and just got moved, then Hurricane Rita hit. We lived with my oldest daughter for two months until we got power and water back at our house.

My mother got sick and I had to go take care of her. The two youngest daughters started college, we had to move them.

Then my sister broke her ankle and I was taking care of her 9 and 11 year old boys.

Then Thanksgiving and Christmas hit and we had company every weekend for two months. I'm not complaining, I love having my family here, but it just takes up a lot of my time.

Then my husband and children bought me a new puppy for Christmas. I had to fly to Maryland in January to go get it and now I'm house training a puppy. Thank God she's a really smart puppy and is already starting to ask to go out at 10 weeks. Life is slowly starting to return to normal.

I just pray that with this global warming that this coming summer isn't going to be a repeat of last summer with the hurricane season starting in Jun.

Betty, I was just thinking about you too! So glad to see you back again AND with a great recipe!

Yeah, we need to see pics of that new pup - or at least, breed, color, and name! LOL!

Thanks guys, I really appreciate the good thoughts.

The puppy is a Mastiff hybrid, they're called American Mastiffs. They're a dry mouth Mastiff. I love the Mastiff breed but I hate the excessive drooling and I get really tired of my dogs dieing at a fairly young age.

I ran across the breed by accident and did some research. They don't drool, they don't have all the health problems that the Old English does and they live a lot longer.

I got a fawn female last year and I really wanted a brindle female fairly soon so that the two could grow up together but the waiting list is really long and I had to wait a year for my fawn female. I thought it would be next summer before I would be able to get a brindle. My husband and kids found a brindle female and purchased it for me as a surprise for Christmas. My puppies are 6 months apart and have already bonded very well.

Out here in the country all we have is dial up Internet, I'm not sure if I can post pictures but I'll try.

Muffins sound GREAT!!!

NO, no more hurricanes!!!

Wow have you been busy!!!!

CUTE puppy!!!!! What a face!!!! Mastiffs are COOL dogs. Isn't Fang a type of Mastiff (Hagrid's dog in Harry Potter???)
