Char, a couple of supermarkets have them. I find them in the produce section in bulk, or sometimes on the salad bar. I had a chuckle with the last batch I bought. There was a small container of them on the salad bar where all things were $3.99 a pound. I asked the person stocking the salad bar if he had more of the dried cranberrries, otherwise I would just empty what he had. He took my large salad bar box back to the produce department where he filled it up from the $5.99 dried cranberries there, where he gets the cranberries to put on the salad bar. (He had asked about the price differential when he started and was told, "Its marketing".)

You can use oat bran - it's a little higher in carbs but works well and tastes great too!

I wanted a different texture to my cereal, and I was all out of cream or lc milk to put on the cereal, so I put a couple of tablespoons of ricotta in it, mixed it up really well, and it made a texture that I love, plus made it creamy and smooth, added the extra protein from the cheese. That little but of graininess in the ricotta gave the cereal a more Cream of Wheat type texture. I love it.

Did you know, you can actually buy a "brown sugar extract" (I can't remember if it was penzeys.com or spicebarn.com or adamsextract.com that I got this from) and a few drops of the stuff will add a nice rich flavor.

So, I tried Maggie's cereal, but instead of mixing the bran and everything I just used flaxseed meal (0 net gram of carbs), a little half and half (1 g carbs), hot water, a little butter and splenda....FABULOUS....That is just like malt-o-meal to me which I haven't had in years....That is a great breakfast or late night comfort food...Thanks for the recipe....

Can you make this porridge with just flaxseed or ground almonds and hot water, if so what would the quantities be please? I like quite a thick porridge but dont like milky stuff or cream. I can add rhubarb, nuts or berries afterwards, yes?

I know this is an old thread but I am hoping someone still has a look here now and then, LOL.

Thanks Louloo.x

I'm sure you could use only flax or almond meal to make a cereal, Lynn. You'd just need to run the numbers for the ingredient(s) you choose. I would imagine you can prepare it pretty much the same way I describe for the cereal. Add boiling water to the cereal until it's the consistency you like.

The cereal as I describe it, is designed to give a kind of standard low carb meal - nutritionally speaking. It has a good shot of protein, some nice healthy fats and a good fiber count. Just run the numbers on the ingredients you choose and see if the result fits into your chosen program.

A cereal made from only almond meal would be calorically dense - 1 cup (about 95 g) of whole ground almonds runs about 550 calories, 19 g. carb, 11 g fiber.

100 g. of ground flaxseed runs about: 535 calories, 29 g. carb., 27 g fiber.

(aside: subtract the grams of fiber from the grams of carbohydrate to get the "net carbs" most of us use for tracking purposes.)

But, this stuff is really filling so you could probably do fine with a serving that's just a 1/4 cup of flaxseed/almond meal plus whatever else you add.

If you want to check the nutrition data for rhubarb, berries, etc. you can do a search here: http://www.nal.usda.gov/fnic/foodcomp/search/

Lynn, adding either whey protein or soy protein will boost your protein and keep the carbs and calories down. But just plain flaxseed meal or almond meal is ok, just be mindful of the carbs in the almond meal.

I like a touch of maple flavoring in my cereal, but a few chunks of fruit is ok, too. I particularly like blueberries in mine.

I love the term "porridge". No one here uses it, and it's such a lovely word for hot cereal. Reminds me of the story of Goldilocks...........LOL! Perhaps I'll teach the word to my granddaughter, she loves oatmeal!
