| Kim, I use it just about anywhere use sugar is called for (except stuff like tea or coffee). I normally use it in combination with Splenda. In most concoctions, the cooling sensation is not so noticeable, as the other ingredients and flavors mask the cooling effect. To me, that cooling effect is not particularly objectionable anyway. For example, if I use it to sweeten an almond muffin, I don't notice the cooling sensation. But when I use it for the frosting, the cooling effect is more noticiable... probably because there is a much higher percentage of sweetener in frosting than the muffin. One thing I've noticed is that the sweetness of erythritol holds up better to heat than plain Splenda. Oh, I know Splenda claims it doesn't lose sweetness in cooking; but I find that it does some of its sweetening power. Batters or puddings that tasted very sweet before cooking sometimes are barely sweet when done.
