Default PumpKin Pound Cake - Delicious!

PUMPKIN POUND CAKE

* 1/2 cup butter (1 stick) softened at room temperature
* 1/2 cup cream cheese
* 1/2 cup Splenda
* 1/2 cup Vanilla DaVinci
* 1/8 cup double cream
* 5 large eggs
* 2 cups almond flour
* 1 teaspoon baking powder
* 1 cup pumpkin
* 2 tablespoons pumpkin pie mix
* 2 servings protein powder (half cup)

I make this in my food processor on low speed.

Cream butter, cream cheese and Splenda together.
Add eggs, one at a time.
Add almond flour and baking powder mixture one tablespoon at a time.
Add Vanilla DaVinci.
Add double cream.
Add pumpkin.
Add pumpkin pie mix.

Pour into greased pan and bake at 350?F for 40 minutes. Or pour into muffin cups and bake for 18 minutes.

Alcmene, I love anything pumpkin. This sounds wonderful, any idea on the counts? Carbs, calories, fat, fiber? Thanks for posting.

I don't know but I will work it out.

Makes about 12-14 servings.

Just had 2 straight out of the oven, I have never made this before and they are YUMMY.

I had a non low carb recipie for pound cake and converted it into low carb and added the pumpkin.

I edited the recipie to include the protein powder as I forgot to add it.

Here is the nutritional information, I have counted everything apart from the DaVinci syrup as I am unsure how to count it!

Cals 4376
Fat 399
Carbs 62
Protein 142


Assuming you get 12 VERY GENEROUS servings then - which equals a nice big muffin, per serving:

Cals 354
Fat 33
Carbs 5
Protein 12

Well, I am not sure, maybe in the US it is "heavy cream"?

Pumpkin Pie Mix is:

* 4 Tsp Ground Cinnamon
* 2 Tsp Ground Ginger
* 1 Tsp Allspice
* 1 Tsp Nutmeg
* 0.5 Tsp Cinammon

I'm pretty sure that double cream is the same as our heavy whipping cream. I purchased a small bottle of it the last time I was in London for my morning coffee and it was so good.

Pumpkin Pie Mix is available in the spice section. Already complete. I have a bottle of McCormick Brand

Which protein powder did you use? I have chocolate (that won't do) and French Vanilla? I wonder if I used the French Vanilla if I should lower the Vanilla syrup.

I cannot find pumpkin spice in the UK so I had to make some! I cannot even find pumpkin, luckily found it on the other side of the country and bought 18 cans ha ha ha.

I used the natural protein poweder which is unflavoured, I think Vanilla would work very well too, not sure about the chocolate though.

Oh, if you are going to lower the syrup then maybe use more cream, or some water? Just for the liquid ratio.

I'm a bit of an experimental cook, I say go ahead and play in your kitchen!

Also, don't forget the syrup is also a sweetener so if you want them just as sweet then you need to UP the amount of Splenda you are using.

I use the Precision Engineered Whey Protein Powder, only because it is easily accessible at the local health store. I normally buy the natural flavour so I can flavour it myself. It is also the lowest in carbs.
