Default Fried fish

We had some frozen catfish we needed to cook, so I tried the corn bran for the breading.

I mixed corn bran with vital wheat gluten, about 3 to 1 ratio, lots of pepper, a little salt.

I broke a couple of eggs into a bowl and beat them. Started heating some oil in a cast iron skillet.

Dipped the fish pieces in the "flour", then in the egg and back in the "flour".
Then fried them in the hot oil until they were brown and crispy.

This made a very crispy coating, and had a very good taste.

I took the rest of the "flour" and mixed it with a little baking powder, the leftover egg plus one, and some chopped onion and cream and water and dropped this by teaspoons into the hot oil, making hush puppies. They would have been good with a little jalapeno, too.

We had a very nice supper, with 2 large pieces left for lunch or supper tomorrow. Carb counts will depend on how thick you coat the fish, and how many hush puppies you eat.

We decided that this would be good as a coating for fried chicken as well. Next time I will try to measure more precisely.

I've done just that using the ATkins corn muffin mix! And the hush puppies too. Make up some LC coleslaw to go with and DH is in heaven!

And I HAVE used it to fry chicken and it is DELICIOUS.

Now that I have the corn bran, I might do that next time instead of the muffin mix.

I've put both sliced green onions and jalapenos (not at the same time, in different batches!) into the hush puppies and they are both good. I've also added some grated cheddar - particularly good with the jalapeno!
