| I bought a small pacakge of LC tortillas. I'd like to add one here and there to my menus. Here's my question: Do they freeze well? The bag has ten in it, and it'll probably take me ten weeks to get through the bag.

| Michelle, I have frozen the La Tortilla Factory tortillas, and they freeze really well. I'd package them in zip bags according to how many you think you'll use at a time. I just throw the entire package in the freezer. They also last quite a long time in the fridge. |

| Freeze or not to freeze, I keep them in the fridge and they will last a long time... I would freeze 1/2 package, and keep the rest in the fridge.... I usually go for one or two a week. c

| i have never tried freezin em.. but i have left them in the crisper in the fridge for EVER... always fine if the bag is zipped well.. |

| I make sour cream chicken enchiladas with them and freeze individual portions. Taste great when thawed. |

| RECIPE! DAN! yum.. those sound great! never THOUGHT about making something and THEN freezin the tortillas... cool! thanks for the idea! |

| I ALWAYS have at least one package in the freezer. I just toss the whole thing in there, then let it sit on the counter maybe 5 or 10 minutes when I want one if it's still attached to its neighbor - then the topmost one or two become pliable enough to get them out of the package.

| Michelle: I do the same thing Char does. She does lots of cool stuff. I just sit here in Texas and admire her from afar. I am still in awe of her (alleged) s/f syrup bar..... Dan: my Target (Mansfield) still has the Bob's Red Mill Almond Meal for $1.99 per bag. I bought some Saturday. Just an FYI.

| Thanks, Maxibee. It's worth a drive to Mansfield at that price. I'll post the enchilada recipe as soon as I have time to write it down. It's one of those "in my head" recipes that I vary each time depending on what ingredients I have on hand. |

| I make, what I call enchilidas, quite regularly. In each case the process starts with having some leftover meat that I want to make something else out of. I have used cooked ground beef, or ground turkey, leftover steak, roast beef, roast pork, chicken, or turkey. I start by heating some olive oil in a large skillet and adding 1-2 tsp minced garlic, then adding 1 sliced onion, some diced celery, some sliced green pepper, and chopped jalepenos. After the veggies are soft, I add the meat and season to taste with ground cumin, chipolte powder or chile powder, salt and pepper and continue sauteeing until the meat is heated. I then add some Pace Picante sauce. (The amount depends on how big the contents of the skillet have become at this point in time.) I then add 2-3 tablespoons of sour cream and stir to combine and bring the mixture together. When heated, I take a tortilla and lay down a strip of shredded cheddar cheese down the middle, spoon the enchilida filling on top of the cheese, fold the side over and put in the oven, or microwave to heat the tortilla and melt the cheese. They may be frozen either before or after the last step.

| I keep some in the freezer for long periods of time, and they keep. No problem.
