| I just got a couple of pounds of coconut flour with my netrition order and I'm wondering if anyone (Char?) has mapped out any guidelines for using it? It seems to suck up moisture much, much more than almond flour or flaxseed meal. I tried it in some little buns I used for short cake. The cakes, as I made them, had a dense and dry character... a bit odd. Does anyone want to recommend a recipe or two? The coconut flour has a nice taste - only mildly tasting of coconut.

| *BUMP* I'd love to have some ideas, myself. I know there's a book out there with coconut flour recipes, but not LC from the recipies I've seen. So far, I've only used it when I needed a flour substitute for breading shrimp, chicken filets, etc...
