Rhubarb

"Low Carb Cooking" at Low Carb Diet Support: "My friend has given me some rhubarb straight from his allotment. Any ideas about what to do with it? I would prefer to keep the calories down!...."

My friend has given me some rhubarb straight from his allotment.

Any ideas about what to do with it? I would prefer to keep the calories down!

Oh, rhubarb.....we had it a lot when I was growing up, but it doesn't grow well in Central Texas, so I have to buy it frozen. Stewed and sweetened with Splenda, eaten with hot low carb biscuits and butter....yep, wonderful. Skip the butter if calories are an issue.

Years ago my aunt made a lemon rhubarb pie that was to die for. I have a recipe for a low carb lemon filling and have always meant to try it with added rhubarb, but I never think to buy the rhubarb. If I try it and it turns out, I'll post the recipe. If you can't come up with something soon, you can probably just dice and freeze the fruit until you come up with an idea.

I am so jealous. There's nothing quite like fresh rhubarb.

I cut mine up in 1 inch slices and cook it with an equal amount of halved strawberries and a little bit of water to create a stewed sauce which I sweeten to taste. It's good on everything from yogurt to cheesecake or anything else that strikes your fancy. Back when I was a kid, we put it on vanilla ice cream and pancakes. Yum!

I've also made it from frozen rhubarb and strawberries. Use a bag of each and omit the water, cook over low heat until the fruit thaws and cooks down.

WOW! I guess it is an acquired taste huh. I remember once buying what I thought was a cherry pie and wondering why they put celery in it. It was extremely tart!

It wasn't until over 10 years later that somebody told me that it must've been a rhubarb pie.
I can't imagine eating that with ice cream.

Tom, with the strawberries and sugar the way my mom made it, it came out pretty sweet. My own version is a little more tart. I remember my grandma (who was the source of much of the rhubarb we ate) saying that she had to taste the filling and adjust the sugar every time she made it for a pie because it varied so much in tartness.

But I agree, it's an acquired taste!

Oh, I LOVE rhubarb! 'specially mixed with strawberries, as Esther describes. It's wonderful on homemade lc vanilla ice cream.

I never had rhubarb until I moved to the Hooterville area, where everyone seems to have some growing in their backyard. It may be an acquired taste, but it was one that I acquired the first time I had a slice of rhubarb pie. I do like the tart/sweet combo. I make cranberry sauce and use it just like any other jam or preserve.

Mmmm some great ideas!

Some rhubarb chutney for eating with yoghurt is one idea that came to me.

Also, anyone know anything with rhubarb and pumpkin, I love them both and happen to have some at the moment!

Here is the rhubarb and apple stew, I cooked that then added as topping made from oats, butter, cinammon and cloves and some Splenda. It was yummy served with yoghurt!

We bought some rhubarb last weekend...had to snap off all the bad ends (at the store, wasn't gonna pay by the lb for bad pieces!). I cooked it with some cranberries, sweetened with FiberFit, and added some raspberry DaVinci's sf syrup. It was divine. Made a OMM w/Carbquik, and we had rhubarb-cranberry shortcake. There's still some in the fridge, might make some biscuits to go with it.

Man, I wish I could get my DH to eat it! He swears he hates it. I love it.

Heck, I may just get some for myself anyway - sometimes it's nice to have a snack that he won't touch!
