| Hi all! GREAT APPETIZER RECIPE!! I came across this recipe when I was looking for a way to use up good canned crab meat... I'll put the link since it is not my creation - but I have made changes that I'll note here.. http://olddutchfoods.ca/recipes/inde...7&recipe_id=59 See my comments/changes below... HOT CRAB SPREAD Ingredients: 1 7-1/2 oz can lump crabmeat (my cans come in 6 oz size so I changed other amounts to fit this) 1 8 oz package cream cheese, softened (6 ounces for my version) 1/4 cup finely chopped onion (I used scallions, a MUCH better alternative, in addition to being lower carb!) 2 tablespoons mayonnaise (I used 1 and a half T) 1/2 tablespoon lemon juice (I actually doubled this to 1 T) 1 drop Tabasco sauce (ha! is there such a thing as one drop of Tabasco? I used four and could still not taste it!) Pine nuts for garnish (I used a liberal amount and covered the dish before heating - it worked out GREAT) Directions: Drain excess liquid from crab, and remove any shell or cartilage. With a fork, lightly flake crab meat. Mix together all ingredients except pine nuts. Then top with pine nuts. Bake at 375? degrees in a pie plate or other shallow dish for 25-30 minutes or until lightly browned. (I used a small pyrex - a pie plate would have been too big) Serve warm. (So how many changes would I have to make to a recipe to not have to link it to the original? I mean, does changing amounts and types of ingredients count?)... just musing... ENJOY!! |

| Thanks Sharron! I want to be careful - especially with stuff I find on-line, in large part because I myself have posted articles and recipes and would be angry if someone put something I'd written or developed out there as "their own". It is a really yummy spread... great on crunchy low carb things like celery. |

| I agree with Rob, Rach. This looks like it would not only be yummy, but also be quite impressive. A double whammy!

| I made this last night and DH and I both thought it was very tasty indeed. I served it over spaghetti squash noodles. It was a bit soupy when I put it in the oven, but it firmed up while cooking (I let it cool a few minutes in the baking pan before serving). My only problem was the mediocre quality of the Sunkist White Crab Meat I used. Next time, I'll either use fresh, frozen or a better quality of canned crab, if I can find one.

| Hi Terry... what a GREAT idea to serve over something like the sp. noodles... brilliant. I might suggest that the best canned crab I've ever found, without getting fresh dungeoness, for example, is at Costco, of all places. I can't remember the name but it's 16 oz. in a black can (red letters, etc. on the outside) - very, very nice crab meat. Thanks for the inspiration on the noodles - cool!! |
