| HI y'all I've not been recording my recipes for a while cuz', frankly, I've not been cooking much. Had a car accident about a year and a half ago, then another serious injury that put me off my feet back in October. Just now getting back into the kitchen... Anyway, I made this yummy salad for lunch and thought I'd share it I found a huge 28 oz can of quartered artichoke hearts at my local discount store for something like $1.50, so it was the beginning of this salad. Artichoke and Chicken Salad 1 - 28 oz can quartered artichoke hearts, drained (I didn't quite use the whole thing, maybe 1/2 cup leftover for something else?) 1 - 4 oz can sliced olives, drained 3 large stalks celery, 1/2" dice ~2 cups cauliflower cut into 1/2" pieces 2 chicken breasts, cooked and cubed ~1/2 cup Italian salad dressing (I used Bernsteins Cheese and Garlic Italian) ~1/4 cup sunflower seeds ~1/4 cup Italian 4 cheese blend 1 tablespoon parsley flakes Combine all ingredients in a large bowl in the order listed. Serve chilled. Makes about 12 servings. Yumm c2006 Sharron Long |

| Prayers for a speedy recovery, Sharron. I've loved your cookbook and I'm sure to like this recipe. I love artichoke hearts. Yummmmmmm. Feel better.
