| I've always been a big fan of roasted veggies - 450 pre-heated oven, plenty of olive oil (not extra virgin) salt and pepper. About 6 or 7 min per side, depending on the size and density of the veggies. Sprinkle with grated parmasean before serving. Recently, I came across a recipe for broiled veggies. Same preping except oven on broil, but only about 3-4 min per side, leaving the oven door slightly ajar and watching carefully. As with most cooking, timing is everything. They go from carmelized and delicious to burnt in a matter of seconds. This method works exceptionally well with asparagus, onions and bell peppers. Also, a quick way to cook bacon when you're in a hurry. I usually bake bacon at 350 for 20 min or so. You can broil the same amount in about 8-10 min. |

| Dan, I love baking my bacon. I line the broiler pan with foil, for easier clean up, and put as much bacon on the rack as I can, and I bake mine at a hotter temp, at least 400. I can be doing other things while it bakes. Never broiled bacon, but I might try it if I'm in a hurry and don't have a lot of other things to do. I'd burn it for sure! I also like to cook the veggies on the grill pan, with lots of olive oil. Don't like the clean up afterward, though! |
