Lemon Pound Cake

Default Lemon Pound Cake

I made this for a party on New Year's Eve, all my non-low-carb friends LOVED it!

  • 1/2 cup butter, softened
  • 1 cup cream cheese, softened
  • 1/2 cup granular Splenda
  • 1/2 cup Vanilla DaVinci
  • 6 eggs
  • Grated rind of 1 lemon
  • 1/2 cup of whey protein powder (I used plain)
  • 1 and 3/4 cups of almond flour (I made it myself using whole almonds with their skins on - very important makes it taste better)
  • 1 teaspoon baking powder
  • 1/2 teaspoon of nutmeg
Cream the butter, cream cheese and Splenda in a food processor.
Add the eggs, one at a time.
Add the DaVinci and the grated lemon rind.
Mix together the almond flour, protein powder, nutmeg and baking powder then add to the mix in the food processor one tablespoon at a time, mixing inbetween.


I used a silicon Bundt pan to cook this at 180 degrees celsius (350 maybe for you American lot? ) for about 40-45 minutes.

This looks a lot like the almond flour pound cake that I make, but yours has the whey protein powder, which sounds like a great addition, and nutmeg! Never thought to use that!

None of my non-lc family or friends can tell that this isn't just a plain old pound cake, it is so good! I like a slice for breakfast, with a small dab of sugar free jam on it. Although I have a problem with portion control with this cake, so I dare not make it too often!

I too have portion control problems which is why I cook for parties when I know other people will eat it.

You gotta make this as it is divine, the lemon really adds something to is,as does the nutmeg. The protein powder was an addition on the third attempt I made it and it gives it a lovely consistency.

Mahalo for sharing this recipe. What made yours so attractive was that you made your own Almond Flour. Would you share how you make it? The almond flour at our health food store is very expensive, but I can tolerate the whole almond price better. I would like to try and make the flour myself.

Hey CC

It was easy. I weighed out the almonds and then stuck them in my food processor until they were the consistency I wanted. I quite like it a bit grainy so I didn't make it into a very fine meal.
