    Default Vegetable Stock

    Hi

    I need some advice. I made some vegetable stock as I had some veggies that were going off and I wanted to use them up. I simmered the following for one hour:
    1 parsnip
    1 carrot
    2 green onions
    half a turnip
    2 celery sticks

    I have intention of keeping any of the veg, just the liquid, does anyone have any idea what the carb count would be? I looked it up in Fitday but cannot find it. Shop bought stock has about 11 carbs but I think it is because they liquidise the veggies and keep them in.

    As a general rule, stock is a calorie/carb free food. I'm not so sure about home made stock though. Please do be careful about using foods that are "going off." Usually, one wants the best, freshest ingredients for stocks as that is the primary flavor you will impart to the food. If it does have any carbs, it would be a minute amount, and I wouldn't really even be concerned about it, especially since you have low GI veggies there.

    Thanks Sharron, they weren't unedible, it's just that I knew I wouldn't be eating the carrots for example, (I bought them for a dish I made for a party) and I wanted to use them up rather then throw them out.

    BTW I had a cup for breakfast just plain and it was really really good.
