| I don't make it at home it as it takes a few weeks and my local supermarket do a nice cheap one. It is basically just cabbage and salt. This website seems to have good instructions: http://www.kitchengardeners.org/sauerkraut.html

| Heather, I just used the canned sauerkraut. It is cheap and low in carbs. If you decide to use canned sauerkraut, make sure it does not have any sugar added like you will typically find in "Bavarian Sauerkraut".

| I usually buy the store brand - it's wonderful with pork, smoked sausage, hot dogs. Just don't ruin it with caraway seeds. (I hate the taste of caraway!) But seriously if you like caraway, you could add a little. I just can't see anyone destroying the taste of something like sauerkraut or rye bread with that taste. {shudder} But, that's just me. (I love the taste of seedless rye bread. But it's not low carb. Sigh.) I like to drain the sauerkraut a little, let it brown just a bit in a little oil or butter, then add the meat and let it all cook through. And if you cook pork in a crock pot, you can add the sauerkraut during the last hour or so of cooking, just to heat it through. My sister-in-law used to serve pork and sauerkraut over mashed potatoes. Now, I wonder how it would taste over caulimash? |

| Sauerkraut tastes very good over Cauliflower mash. I love it. We also use to serve it over potatoes. I never browned mine in butter before, I'll have to try that. Carrole |

| As a good eastern european I grew up eating sauerkraut.... The canned kind not the make it yourself kind... so here is a great recipe for using with hot dogs, or sausage: to one can of sauerkraut (make sure you are not getting the bavarian kind it is usually sugared) saute 1/2-1 chopped onion in oil or butter, add the canned sauerkraut, juice and all a couple sprinkles of garlic powder, and some cracked black pepper (watch the salt since it is in the brine) cook med heat stiring quite a bit so it doesn't burn, till most of or all of the liquid has evaporated. When you cook till all has evaporated, cook a little longer to brown the sauerkraut a little... This is great on hot dogs, sausages, etc.
