Default Special Meal for Friend

Hi everyone

I am cooking for a very special friend this Friday. She is disabled so cannot cook many things for herself, she is also about to go through a nasty divorce so I thought we could spend the evening together and I could cook for her and cheer her up.

I think I will make the following (bear in mind I am inducting ATM):

STARTER
Chestnut mushrooms stuffed with cream cheese and German Bierwurst

MAIN
Pan fried wild scottish salmon with ?????? (should I keep it simple and just have a nice salad?)

DESSERT
Strawberry sugar-free jelly with whipped cream


Do you guys think this sounds allright? I am unsure as to what side to make with the salmon maybe something with spinach but I am now more convinced that a lovely green salad would compliment the dish well. I used to make the stuffed mushrooms with crab meat but it is so expensive here I tried the German sliced deli meat the other day and they are sooooo good.

how about a big ole bowl of fresh steamed broccoli with a nice cheddar cheese melted on top?
or, cauli mash topped with cheddar and bacon bits?
With either of those, you could still have a fresh tossed salad with a nice olive oil and vinegarette type dressing.

ohhhh broccoli!

Do you think jelly is OK for dessert? I think she will be amused. I cannot think of anything else that doesn't take up too many carbs.

Al,
by jelly, do you mean jello or gelatin? I think that would be great. Maybe slice a few real strawberries to top the gelatin with, then a dollop of the whipped cream.

Or another idea...a little more dense on the calories, but a nice chocolate mousse with pure whipping cream, unsweetened cocoa, and splenda, and a dash of vanilla. Serve in frozen/frosted footed dessert dish.

I bet you'll make the perfect dinner How sweet of you to do that for a friend

Yes I think that you call Jello what we know as Jelly.

No fruit for me though!

Alcmene, another possibility for your veggie is something I have with salmon all the time. Spinach florentine. Take cooked and well drained spinach, then melt a little (or lot) of butter in a small skillet, sautee 1 clove of minced garlic until light brown, add cooked spinach and the juice of 1 lemon, toss, heat and serve.

Asparagus goes nicely with salmon, too. If fresh isn't available, the frozen isn't too bad.

But I must say that a nice green salad with a vinaigrette makes a nice side for salmon. It's my "usual."

I love both spinach and asparagus, although asparagus is pretty expensive. :(

Green beans are also really nice with salmon. Well, actually, any green veggie is good with salmon! When I order it at a restaurant, it often comes with steamed zucchini and yellow squash, which is also a wonderful side.

Since you are inducting, then the gelatin dessert would be your best bet. Served in a pretty dish with a dollop of whipped cream, what could be better?

I would suggest a lemon dill butter for your salmon and because salmon is so rich, a more simple veggie. I don't know how available sliced almonds are for you, but a really easy thing to do is just cook your favorite green veggie (beans, broccoli, asparagus, etc.) then brown some sliced almonds in butter and season them with your favorite seasonings (I'm partial to garlic, lemon pepper and oregano, but dill would be good in this instance because of the fish!) Then just sprinkle the nuts over the veggies. It looks really impressive but is super simple. If you want more specific instructions, I have an actual recipe for this in one of the books I wrote: Butter Browned Almonds is the name, I think.

Jelly would be fine... especially since you are serving salmon for your main course. Salmon is just so rich! My hubby is a salmon fisherman

Another thing that might be fun, because I just so happen to know you have a good blender... You could make some nice s/f ices -- just use seltzer water (or plain water), ice cubes and s/f syrup (orange or strawberry would be nice!) and you could add a bit of cream to make it more like a milk shake.

I wasn't thinking of a sauce for the fish but the butter sounds ace, although I am inducting so no nuts.
