| Oh my, today I went to a supermarket that is not my usual closest one, but they tend to have good deals so maybe once a month I check it out. Anyway, they had packs of fresh ground chicken down from ?2.99 to 99p. So i bought 6 packs! I really don't have room in my freezer for all of them as I also bought some lean ground beef that was cheap, so what can I do with the chicken? I thought maybe chicken burgers and chicken meatballs.

| Chicken chili, chicken stew, chicken enchiladas if you can find low carb tortillas. Cook it up and keep it in the fridge to have on salad. How about cooking it and making it into chicken salad, with mayo and celery, etc. What a great find! I would have bought all of them, if I had to borrow freezer space! |

| It's minced up though already. Chili sounds ace. I am making chicken and mushroom muffins as we speak.

| Don't forget chicken meatloaf. It also makes good taco salad meat. You can mix a whole batch and add some on top of your salads each day for lunch. |

| OMG chicken meatloaf! You wouldn't believe how much I got. 6 x paks of chicken mince (500g) at 99p each. 4 x packs of lean minced beef (500g) at 99p each. 3 packets of haddock at 99p each. And a dozen Extra Large Organic Free Range eggs at half price that expire in a week's time. No problem in eating them in a week me thinks! ha ha

| That's awesome that you got so much!! and no kidding on the eggs. DH is always saying, "we need eggs? again?" hahaha!

| I get eggs from a guy who brings them to our office. Nice big brown eggs, sometimes with a feather or 2 still attached! He'll bring from 3 to 6 dozen at a time. If no one else needs them, I take them. They keep for a long, long time in the fridge. How about chicken sloppy joes? On a OMM! |

| Sloppy joe - completely stolen recipe:
Simmer, uncovered, until mixture reaches desired consistency, about 25 to 35 minutes. I obviously go bunless By the way - if you're making meatloaf or meatballs - I recommend mixing meats - aka 2/3 cx and 1/3 port or beef or veal etc.

| You can mix any kind of meat in a meatloaf. Traditional is one part beef, one part pork and one part veal. You can put the sloppy joes over a one minute muffin, too. There are probably as many sloppy joe recipes as there are people who make them! And meatballs - so versatile - I love them in soup! |

| My favorite Chili is usually 3 different kinds of meat - something like 1 lb.s stew beef, 1.5 lb.s meatball (ground chicken, pork etc) and one pound ground turkey. (add big can tomatoes, several onions and one large can pink beans (good fiber/carb ratio) and spice to taste (chili powder/cayenne). For those without chili powder, it is Oregano, Garlic Powder and Cumen with various peppers thrown in. Sloppy Joes for me tend to be a little sweeter/thicker than a Bolognaise. But in the end, quite similar.

| Wow, so many ideas, thank you so much! Really interesting to see the diversity in cooking betwee different cultures. Spride - I don't think I know what pink beans are.

| Or, a can of black soybeans for those of us who need to be stricter on our carbs. They have a huge amount of fiber in them, and absorb the flavors of the spices you use. They are kind of bland on their own. Eden is the only brand I've ever seen. You can sometimes find them in a health food store, or buy them online. I get mine from netrition, but you can also get them direct from Eden foods online. Don't know about getting them to your neck of the woods, Alcmene. Shipping might just not be worth it for you. |
