Default Low carb in the slow cooker...

Hiya,

Does anyone know where I might find some low carb recipes for the slow cooker. I'm a working mom, so the slow cooker is a life saver for me.

TIA

~Julie

Hi Julie,

There is actually a whole book written about it. It isn't hard though. What are you wanting to cook? For stews just substitute cauliflower, zucchini, cabbage for your potatoes. Roasts & soup the same. Just remember, don't add any cream or other dairy products until the very end.

I like making whole chickens and also beef brisket. I put them on in the morning when I go to work, by the evening when I am home they are ready and the meat is lovely, falls of the phone, and you also end up with carb free stock you can use.

I use my crockpot for country-style pork ribs. They are nice big chunks of pork with few bones. Let them cook all day, and they are tender and fabulous in the evening. Sometimes I put a little Liquid Smoke in them for some extra flavor, and a dash of garlic powder and onion powder. Heat up a little sauerkraut, add the cooked meat, and you have supper.

I don't think I know what liquid smoke is! But that sounds yummy.

I'm not sure if they have it in the UK?? If they do, it would be with the herbs and seasoning spices at your grocer. It is pretty powerful stuff, but it makes things taste like they've been cooked on the BBQ without having done so...

I love using liquid smoke in the crockpot..... it truly does give the flavor of a slow cooked meat on the grill. You might ask your grocer if there is such a thing in your area Alcmene.
