Default Cinnamon Cheese Danish Atkins Rolls (with pictures)

This is an old recipe that I just came across on another forum. I made the Atkins Revolution Rolls when I first started this diet and I hated them! I was a bit reluctant to try this recipe because of that but I’m so glad I did, these are so good. The recipe makes six and I eat two for breakfast as bread with my bacon and eggs.

If you make it with liquid Splenda or a sugar alcohol, you can get the carbs down to 2..otherwise they are about 4..because of the Splenda's filler.

The pastry part has the texture of a firm bread pudding and the filling is like a creamy cheesecake. They also help kill the craving for something sweet that I always seem to have in the mornings.

I don’t have a muffin top pan, which is the recommended way of cooking, so I used a cereal bowl as a form and made some little foil cups then sprayed them with cooking spray.

Cinnamon Cheese Danish Atkins Rolls

Pastry portion:

3 extra large eggs, separated (reserving 1/2 yolk for filling)
(I didn't have extra large eggs so I used 4 large)
1/4 tsp. cream of tartar
1/4 cup granulated Splenda or 3 packets of Splenda other sweeteners
(I used 1/4 cup Splenda plus 1 tablespoon Erythritol)
1-teaspoon cinnamon
(I added 1-1/2 teaspoons vanilla)
3 Tbs. ricotta cheese or sour cream
(I used sour cream)

Filling:

4 ounces cream cheese, softened
1/2 egg yolk (from above)
(I used 1 whole yoke from my 4 eggs)
1/4 cup granulated Splenda or 3 packages, etc.
(I used the same sweeteners as above)
1-teaspoon vanilla

Microwave cream cheese until soft. Remove and add the 1/2 egg yolk, sweetener, extract, and flavoring. Fill pastries.

Pastry directions:

Separate eggs, putting the whites in a large bowl and the yolks in a medium bowl. Take 1/2 yolk out and put it in a little dish to reserve for filling. With your electric beater, whip whites and cream of tartar until very stiff.

Add sour cream or ricotta, cinnamon, sweetener to the yolks and beat well until smooth

Gently fold yolk mixture into the whites, using a big spatula, being careful to get it all blended well. Then Spray a cookie sheet or muffin top pan (the best way), and plop 6 equal mounds of batter to make 6 Danish. Make an indent on each mound and fill with filling. Bake about 25-35 minutes at 300 until golden brown. Remove, cool and enjoy

Betty, do these freeze well, or are they stored in the refrigerator until used?

I keep mine in the frig; I've never tried freezing them I don't know how that would work. I've never needed to freeze them, they don't last that long.

I had one of these rolls cold this morning and I think they are even better cold than warm. They are like a rich cheesecake desert of some kind.

I'm going to try to make one with a chocolate filling next time and see how that works. Cinnamon and chocolate are really good together so I think that I'm going to leave the pasty part cinnamon with a chocolate center.

I don't have any Erythritol, do I need it?

I also prefer DaVinci to granular Splenda, can I sub?

I don't think DaVinci would work; it would be too much liquid. You don't have to use the Erythritol for this to work; it's just what I like. You can use any sweetener that sweetens to your liking.
