Default Broccoli-Cauliflower Salad

About 30 years ago, when we moved to Kansas City, I was introduced to a local salad favorite that I had not had before. However, as the dressing was made with mayonnaise, and the directions expressly prohibited using salad dressing, when I entered my low-fat diet daze, that salad fell out of favor. Now that mayonnaise is no longer a bad word, I decided to convert the recipe to low carb, an easy task. It is quick to make, and as I have an affinity for vinnegar flavored dishes, I find it quite tasty.

3 cups broccoli flowerets, cut into bite size pieces
3 cups cauliflower flowerets, cut into bite size pieces
4-6 green onions, sliced
Dressing:
1/2 cup mayonnaise
1/4 to 1/2 cup vinnegar (I use white vinnegar)
1/4 to 1/2 cup sugar substitute equivalent (I used liquid splenda)
The amount of vinnegar and sugar substitute you use is a matter of personal taste. I use equal measures of the mayo, vinnegar, and sugar substitute. If you want a thicker dressing, use less vinnegar and adjust the sweetner accordingly.
Put the broccoli, cauliflower, and green onion in a mixing bowl. In a small mixing bowl or blender, combine the dressing ingredients and whisk or process until combined. Pour dressing over the broccoli mixture, toss to coat, cover and refrigerate for a couple of hours, stirring occasionally. The salad will keep in the refrigerator for several days with the veggies remaining crisp. When made with liquid splenda, the dressing is essentially carb free.

Henry...my brother relocated to Kansas city last year..we have visted twice already...I must say I was impressed with the grocery stores yall have there...I am trying to remember the name of this particular one I have in mind...hhmmm..cant think, but anyway it had an awesome deli...wonderful salad bar..I could not believe I was in a grocery store!!! Kansas City is so pretty and clean!! he is in Independance..I think thats how you spell it...anyway...have a great evening!

Lisa, kansas city has the greatest variety of grocery stores I have ever seen in all my travels. I have 10 different ones within 4 miles. Actually its 12, but 2 are the same chain. Then there are 2 different ones I go to by my office. It really helps keep the cost of groceries down.

How would this be with a little bit of onion added? Maybe some diced zucchini.

Must be nice to have that kind of variety in your stores. We have 2 stores here in our little town, owned by the same company. We drive 50 miles to shop just to get decent prices and quality. But I'd still rather live in a little town in the middle of nowhere than a big city any day!

Nita, I think a little onion would probably work. However, because of the water content of zucchini, I don't think it would hold up and would probably thin the dressing down as the water releases from the zucchini. If you were not planning on having any leftovers and were goingto eat it after a couple of hours, then it would probably be ok.

Henry, thanks for posting your recipe. We had the salad for dinner tonight. I added some bacon bits in my version.

I was just going to say...someone once made this (just with broc, no caul) and they added bacon, dried cranberries and sunflower seeds, it was SO good. I think you'd have to use very little sunflower seeds, and no cranberries, but definitely on the bacon! That's my mantra: Everything is better with bacon!!
