Carbquick question

"Low Carb Cooking" at Low Carb Diet Support: "I'm hoping someone can answer this for me. I've tried the Atkins bake mix substitute recipe and didn't really like the results. Can I use Carbquick in all recipes that call for the Atkins mix? ...."

Default Carbquick question

I'm hoping someone can answer this for me. I've tried the Atkins bake mix substitute recipe and didn't really like the results. Can I use Carbquick in all recipes that call for the Atkins mix? And if so....do I use it cup for cup?

Donna, if you would post a recipe you would like to substitute carbquick for the Atkins bake mix, I will take a look at it. The concern I have for a general answer, is that carbquick has levening included, so it might not work in all recipes. If you were to ask if you could substitute carbquick for a recipe calling for bisquick, I would say yes.

Donna, I've found that Carbquik works better with a little added leavening. If I make biscuits, I always add extra baking powder. It also has canola oil in it, so you shouldn't have to add fat, but I always add a little extra, especially butter.....everything's better with butter, of course!
