this recipe was found it at http://www.recipezaar.com so I give full credit to the person who created it. My husband and I tried it last night and it tastes exactly like a thin crust pizza. Its unbelievable! I realize those in the earlier stages of low carbing can't have it, but oh, my, the rest of you should try this! the only change I made was to add a small amount of tomato sauce first, before the tomatoes.

This is my own version of pizza you can have when doing the low carb thing. It is delicious, even if your not on a diet!

1 servings
15 min 5 min prep
1 low-carb tortilla, wrap (any flavor)
1 small tomato, thinley sliced
pepperoni (about 15 slices..enough to cover pizza)
2 tablespoons olive oil
garlic salt (optional)
1/2 cup mozzarella cheese
1/2 cup fresh parmesan cheese (not in the green can!)

put 1 tablespoon olive oil evenly on one side of tortilla,lightly sprinkle with garlic salt(to taste) and place oil side down on a pizza pan.
put 1 tablespoon olive oil on dry side of tortilla and lightly sprinkle with garlic salt(to taste).
place thinley sliced tomatoe in one layer across tortilla.
place pepperoni in one layer on top of tomatoes.
add mozzerella cheese.
add parmesan cheese.
Place in preheated 425'oven for 5-7 mins untill cheese is melted.
turn oven to broil untill golden and bubbly.
keep a close eye on this pizza, it is very thin and can burn very quickly. Worth every bite!

Thanks for the pizza reminder. I have lots of pepperoni & mozzarella, and some asiago cheese. I think I'll make this without the tomatoes, to save a bit on the carbs, maybe put some red & yellow bell pepper on top. I'm drooling now!

We had this pizza for supper last night. Actually, we had 2! No tomato, but with red & yellow peppers, and a little Italian seasoning & onion powder. Yummy!

Next time I think I'll add some black olives. Or maybe make it a Mexican pizza, using jack cheese and/or cheddar, jalapenos, maybe a few black soybeans. And a little salsa. Might be a great lunch.

We make something very close to this but I've experimented with shrimp & black olives- YUMMY (no tomato but maybe next time)

Had one for dinner tonight - only substituted Monterey Jack for the cheese since I'm out of mozzerella - and it was fabulous!!! This recipe is a keeper!

I have one chicken breast leftover. I'm thinking maybe I can use it in this recipe with some cheddar cheese, and some onion? Maybe top it with sour cream after its done? Could put mushrooms on it but alas.... right now I can't afford those extra carbs!

note: I did make this, and it was so good! I went really light on the onion, and didn't use the sour cream.. gotta cut those carbs. This is so good, I will do it again.
