| does anyone have a low carb recipe for meringue? |

| Meringue is naturally low carb, if you sweeten it with whatever artificial sweetener you like. What are you going to be using the meringue for? |

| 4 egg whites, 1/4 tsp. cream of tartar, 1 cup equivalent of artificial sweetener (I use sweetzfree for this) 3/4 tsp. vanilla. Whip egg whites (room temp) in a clean bowl until starting to foam. Add other ingredients and continue whipping until they form stiff peaks. Spoon or pipe into "kisses" on a baking pan. Bake in a slow oven (250-275) for about an hour, then turn off the oven and leave them there another hour. The idea is to dry them out without browning them. Let them finish drying either in the oven or some other place. Remove from baking pan with a spatula and store in an airtight container. Don't try this on a very humid day, since it makes it hard to get them completely dried out. HTH. Further information added: I should mention, that meringues made with only liquid splenda are very, very delicate - kind of like sweet air, LOL! Using a cup of regular splenda gives a somewhat more substantial meringue (but with an increase in carbs.) Using powdered erythritol - and only a couple of drops of liquid splenda - produces meringues closest to what I remember them being when made with sugar ... then, again, it's been a good many years since I've made anything with sugar.

| Dr. Atkins used to have a recipe that was a basic meringue with unsweetened coconut added. It was really good. I believe it was in the original cookbook. If I can find it, (I'll try to remember to look for it when I'm at home), I'll post it for you. He also had a recipe that was a meringue, but instead of sweetener, you added seasoned salt and chopped pecans. Made a nice crunchy snack, or was good to eat along with soup. I'll try to find that one, too. |

| Here are the recipes I found in the Dr. Atkins Diet Cookbook Coconut drops 1 cup shredded unsweetened coconut 1 tbs creme de cacao (I'd use vanilla) 3 egg whites at room temperature 1 tbs equivalent artificial sweetener Preheat oven to 400 degrees. Place coconut in bowl. Sprinkle creme de cacao (or vanilla) over it and mix well. In a separate bowl beat egg whites with sweetener until very stiff. Fold egg whites into coconut. Drop by teaspoonfuls onto cookie sheet that has been sprayed with Pam or other such product. Bake at 400 degrees for 7 to 10 minutes. Cool. Refrigerate to store. The gram total with the creme de cacao is 25.9. This is an old book and doesn't take into account fiber deductions. My bag of coconut says that one cup is 28 gms with 20 of fiber, so 8 net grams for the recipe for the coconut. Meringue Munchies 2 egg whites 1/4 tsp seasoned salt 1/4 cup chopped pecans Preheat oven to 250 degrees. Beat egg whites with salt until very stiff. Fold in pecans. Drop by tablespoons onto greased cookie sheet. Bake in 250 degree oven for 1 hour. Turn off heat, leave in oven for 1/2 hour. Total grams for entire recipe: 4 I hope these are helpful recipes for you. I love the Meringue Munchies. They are a great crunch. |
