| My love for Taco salad prompted me to dink around and produce a LC version of Catalina, or Western dressing, as known in some parts of the US. Anyhoo, this is what I came up with, and it only makes 2 servings, so you don't end up with 2 cups of dressing that you may end up tossing out because it got *old*. My LC Faux Catalina Dressing By Shelleyg 2 T. Heinz one carb ketchup 1 T. each, lemon juice and cider vinegar 2T Extra lite Olive Oil 1/4 tsp each, garlic powder, onion powder, paprika 6 drops liquid splenda Blend all ingredients, except olive oil, together. Pour oil in slowly while whisking to blend. Makes 1/3 C (5T) of dressing/2 servings. Per 2.5 T serving: 130 calories 13.5g fat 2.5g carb 0 fiber 0 pro. If you use splenda packets, it would probably take 2 packets, depending on your taste. 2 pkts of splenda would add 2 carbs. It definitely gets better after it sits and the flavors all merge. So I try to make it at least a couple of hours before I plan on using it. Shelley

| Wow! Thanks, Shelley. I love Catalina dressing. One of the favorite salads around here is a big tossed salad with a can of drained Ranch Style beans and Fritos, covered in Catalina dressing. Sub black soybeans for the Ranch beans, omit the Fritos, and voila! Gonna try this tonight! |

| Shelley, your recipe is similar to one that I have been making for 30 years and use especially on my Taco salad. It also works well on my spinach salad w/hb egg, bacon, bean sprouts, and green onions. It does make a nice amount but keeps well in the refrigerator for weeks so I don't waste any of it. 1/2 onion 1/4 cup red wine vinegar 1/3 cup l/c ketchup 1 Tbls worcestershire sauce 1/2 sugar equivalent a/s (I use liquid splenda) 1 cup olive or canola oil Put all ingredients, except the oil, in a blender and puree until smoothe. With the blender running, slowly pour in the oil. This creates a nice emulsion. Pour into a glass jar and refrigerate until ready to use.
