| Hey! So I made this recipe, and I love it because I can make a pound of taco seasoned hamburger meat, and just make 1 pepper at a time. This is a recipe for 3 peppers, though. Taco meat: add to 1 lb browned gr beef w/ 2/3 c water and simmer until done. 1 tsp chili powder 1 tsp paprika 3/4 tsp salt 3/4 tsp minced onion 1/2 tsp cumin 1/4 tsp cayenne pepper 1/4 tsp garlic powder 1/2 pkt splenda 1/8 tsp oregano Mix meat with 3 eggs 1/2 c flax 1 c shredded cheese (I use the mexican mixture) Half lengthwise 3 green or red bell peppers (I like both) and blanch in boiling water 3 minutes Stuff all 6 pepper halves with 1/6 the gr beef mixture and top with 1 tbsp salsa Bake at 350 for about 35-40 minutes. Total: cals1910 Fat:125 1125 61% Sat:48 431 23% Poly:6 55 3% Mono:39 352 19%Carbs:66 147 8% Fiber:30 0 0%Protein:144 574 31%Alcohol:0 0 0%

| Sound yummy, Heather! Thanks! I would imagine that, after baking, they could be frozen separately for "future reference."

| I made these up last night (substituting chipotle powder for the cayenne, because I was out of it) and they were very yummy! I'll report how the freezing of the finished product works out for me. Thanks again for this easy and tasty recipe.

| I'm going to make these next weekend (taking a kid to college this coming weekend) and, since no one else here but me (and the kid going to college) likes stuffed peppers, I'll freeze some of mine, too, and see how they fare being re-heated in the microwave. Thanks for the recipe.
