    Default Corn custard

    I used to like to make individual corn custards in the summertime when fresh corn was availble. I always added some hot peppers and grated cheese. I usually made it at breakfast time using leftover corn from last night.

    Has anybody tried anything like this using cauliflower?

    Squarcube, I have made several dishes using cauliflower as a substitute for potatoes.

    I've never made corn custard, but it might work if you chop the cauliflower up really fine. I'm assuming the corn custards are sweet, not sure how cauliflower would lend itself to that. Splenda in place of the sugar? The carbs will be a bit high using milk and cornstarch. You will probably need to tweak it a bit to make it a true LC dish.
