Default Cheese "crackers" with fiber

I think everyone knows how to make cheese crackers by nuking cheese slices in the microwave oven until crisp, to use as crackers, croutons or taco shells. And some have digestive problems with cheese, needing some fiber to move things along. So, I decided to add the 2 things together, so you can have your cheese and - well, you know!

I used a block of Cabot extra sharp white cheddar I got from WalMart Supercenter, put a slice on a small Dixie plate (I just prefer these plates to others, the cracker is easier to remove, and you can use them over and over), and I spread 1 tsp of golden flaxseed meal all over the cheese, then nuked for 1 min and 20 secs, until nicely brown, put it on a plate to crisp up. This doesn't change the taste of the cracker, adds fiber, what more could you ask for?

Experiment with your microwave oven to see how long you need to cook these. Some might cook at 1 minute, some might need 1.5, and it also might depend on how thick or thin you slice your cheese. We had these at lunch with our salads, I did not tell dh that they had flaxseed meal on them, he never noticed any difference.

Nita, sounds like a neat idea, thanks for sharing. I really like the Wasa crackers, sounds like a LC version.
