I was cruising the various LC boards reading recipes this weekend (one of my many favorite past-times...) and came across some recipes that made me go "Duh! That was simple." (Hence the title for this post.) So I thought I'd post a couple here and see if anyone else has some to contribute.

Fried Cheese Taco Shells ~ This one is credited to Charski... I had forgotten all about it until this weeked, and I made one today to have with my leftover taco meat. Yummy, filling and saves on carbs!

Loaded Cauliflower/Broccoli ~ This one was really a "duh" moment for me... how simple to take a bag of frozen cauliflower, cook it, mash it with a potato masher a bit, then add salt, butter, cheese, bacon, sour cream, onions... Faster and simpler than mashed fauxtatoes for when you just don't feel like cleaning the food processor! I had them this weekend with steak while DH had a baked potato. Even he said "Dr. Atkins would be proud." Looks just like the real thing. Tastes just as yummy, too.

OK, that's 2. I'll add more as I come across them. Hopefully others have some to add to this list!

I found this recipe on a beef industry website and I tried it, this really works!!!

I took an Eye of Round Roast and made slits in it. I salted the slits and stuffed them full of roasted garlic cloves or I guess I should say paist; then tied the roast up. I then heavily salted the outside and let it sit for a while at room temp to draw some blood to the surface then browned the outside to get a good crust and proceeded with the recipe. The roast was really good!!!

Strange Roast

This can be started in the morning. Don't ask us why it works-- Any size rib or other roast of beef, salt and pepper, no flour.

Place seasoned beef in roasting pan, uncovered and put in 375 degree oven for 1 hour.

Turn oven off, but DO NOT open the oven door.

For RARE roast beef:
45 minutes before serving time turn oven to 300 degrees

For MEDIUM roast beef:
50 minutes before serving time turn oven to 300 degrees

For MEDIUM WELL DONE roast beef:
55 minutes before serving time turn oven to 300 degrees.

Eggs in a basket -

Ingredients:
Pam Spray
Favorite low carb bread
egg & seasonings.

I don't butter the bread on both sides (like I do my kids) but I spray mine with Pam to save some calories. Then I use the Pam lid to cut a circle in the middle of the slice of bread (I've used heart cookie cutter too) and put circle bread off to side of non stick skillet. I put an egg right in the middle and fry for 3 minutes, flip bread and cook for another 2 minutes. I like to season mine with garlic salt which the kids prefer too.

One of my fav's was shared by our own member JUDY. She sliced boneless chicken breasts into fingers, wrapped with bacon and threw on the grill. Easy, fast, and deliciously juicy.

Thanks for the props, Brenda. I'm glad you like the chicken.

FYI...... most of the time I stick the chicken in some quick marinade for a few minutes before wrapping and grilling.

Last week, I was at Costco while they were serving up samples. I had a cube of grilled cheese that was fabulous.

Queso Blanco
Slice it or cube it
Toast it in a skillet with butter or oil

I don't know if there's a technique for this. Just fry it until it's toasty-looking. It holds its shape and doesn't melt. The cheese is very salty, but for a quick snack, very tasty--a toasted cheese sandwich without the bread.

Our lunch today was one of those simple recipes. I diced and browned some pepper bacon, added 4 or 5 sliced baby bella mushrooms, cooked just barely, then about 2/3 of a bag of spinach, cooked until it was just barely wilted, and then I shaved some asiago cheese on top. Took about 10 minutes tops, dh loved it, what else can I say? We added some cheese crisps on the side, made with pepperjack cheese, for a little crunch. Mmmm.

One of the favorite easy dishes in our house is Buffalo Wings.
Its so easy seperate chicken wings into two pieces. Fry the wings in hot oil for 14 minutes, turning halfway through. In a seperate sauce pan combine a 1/3 cup butter and 1/2 cup hot sauce ( I prefer Frank's hot sauce). When chicken is finished put them in a bowl with the sauce and shake. Tada, super low carb and great with celery and blue cheese or ranch dressing.

Wow - thanks for all the great ideas! I'm going to pick up some queso blanco soon - I love grilled cheese! And buffalo wings are one of my absolute favorites, too. (Although I have to admit I'm more inclined to buy a bag of Tyson ones than make a mess making 'em... )

Here's a great LC "bread" recipe I just read about... made on a waffle maker! It's really yummy and really low carb. And they don't use any ingredients I can't get in town - bonus! I had to ration myself on the first batch and need to make another. They're great for "egg mcmuffins" or hamburger buns.

I've read that they work better on a regular waffle maker (non-Belgian) but I only have a Belgian, and they came out fine, I thought. Also, I think I'd cut the garlic powder in half, but that's just me...

Sherrie's Savory Burger Bun

*Preheat the waffle iron

1 8oz Pkg cream cheese
3 eggs
3 tsp Splenda
1/2 cup Atkins Bake Mix
1/2 tsp baking powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp parsley flakes
1/4 cup buttermilk

Beat cream cheese with mixer until blended smooth, add the remaining ingredients. Spray pan with a light coat of olive oil flavored non stick spray and pour in pan about 1 tbps of mix. It will make a perfect round bun! You can freezed them and reheat them in the toaster! My hubby says this is the best bread yet.

It should come out to about 1 carb per bun!

Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

3 carbs per 1/2 cup serving

I used to make a noodle dish that was a favorite of all who tried. It occured to me that you could substitute califlower for the noodles. However... I just found something that may be better. Tofu Shirataki Noodles are almost zero carbs and full of fiber! Wow! I have to try these!

1 med. head of cabbage - chopped
2 bell peppers - chopped
1 bunch of green onions - chopped
1 pound ground chuck - cooked and drained

Add chopped veggies to cooked beef and sprinkle a with soy sauce. Cook until veggies are tender. Prepare noodles (Or califlower) and mix thoroughly. I used to break up the noodles so they would mix evenly. Toss with more soy sauce if desired. Mmmmm... good stuff!

Love the loaded cauliflower idea - so easy! (will try that tonight)
Mine is beYOND easy and I think as old as the Atkins WOE but worth revisiting imho - cabbage 'noodles' - just cut your head of cabbage into long strips, simmer in chicken broth til tender and you're done. BUT the fun thing about this simple dish is all the things you can do to jazz it up. Drain off the chicken broth, top with butter and several grinds of fresh black pepper or spritz with soy sauce and sprinkle with sesame seeds - butter up and add in some caraway seeds and a few grinds of sea salt - this goes really nice with beef or top off with some bacon crumbles and shredded cheese - pepper jack is my personal fav.
