Default Pork N Beans

No, not the stuff that comes in a can!

I had to make a quick supper, so I dumped a can of black soybeans into a skillet, added some Walden Farms bbq sauce, and some leftover diced pork roast, let it cook through, added just a smidgen of FiberFit for a teensy touch of sweet, and half a can of diced tomatoes with green chiles. Let it simmer a few minutes, piled it into bowls for a quick but filling supper. It's going to be a staple in our house now. Probably would have been better with a touch of garlic powder, but I was too tired to think about it. This would be all to taste, of course. You might like more beans than meat, or more bbq sauce, or less, or perhaps low carb ketchup instead.

I love one-pan meals.

Sounds tasty Nita. I have to cook the black soy beans in a pressure cooker to get them soft enough for me. However, I guess after draining the extra water after cooking them in the pressure cooker, I could use the cooker as a regular pan and keep it to one pan as well. If you used the Heinz l/c ketchup, you would probably not need any additional sweetener.

Sounds great, Nita!

Like Henry, I tend to pull out the pressure cooker for black soy beans. It does soften up the soybeans and makes the "mouth feel" more like regular beans.
