Hi Donna, sorry i didnt read your post before today.
Line muffin tin with paper cups, this recipe makes 12 muffins.
1.5 cups carbquick
1/4 cup erythitol
1/8 cup splenda( concentrated restaurant blend i use,about the same as using packets )
1/4 cup coconut oil
1 teaspoon vanilla extract
1/2 cup half/half
1/3 cup frozen blueberries, thawed and drained( or i guess u can use fresh, frozen is a preference of mine.)
1/3 cup fresh cranberries
1 egg, beaten

Preheat oven at 375 degrees, put all dry ingredients in bowl, add all liquid ingredients and mix just until blended, do not over mix. If it seems too stiff add a lil more half/half, immediately fold in cranberries and blueberries and mix quickly. Immediately pour into muffin cups and bake for 12-15 mins or until golden brown. The 1/4 cup of oil and sweetener makes them very rich and sweet thats how I like them. You can tweak the oil and sweeteners to your taste. I hope I havent left any steps out, I usually dont post recipes for fear of missing something or a step.

Let me know your opinion once youve tried this recipe.

No levening agent in this recipe?...or is it in the Carbquik? ( I don't have carbquik, but I may try this with BRM low carb bake mix).

Yes Shelley the leavening is in the carbquick. If I sub 1/4 cup of flax meal for same of carbquick then I add a teaspoon. But I love this recipe because sweetness of the blueberries and the tartness of the cranberries is a wonderful balance of flavor for me.
