Default Thanksgiving Dinner

This will be my 4th Thanksgiving since starting a l/c WOE. For each previous one, I used l/c versions of the traditional recipes. Since I know I can do those recipes, I no longer feel constrained to limit my Thanksgiving meal to the traditional turkey etc. Since I will be fixing the meal for just dw and me, and don't feel like fixing a turkey, I have decided to do a non-traditional special meal. My original plan was to base the meal on my cranberry-port pot roast. However, the roasts that I normally would use for that dish are not on sale but I can get a whole ribeye at a great price. As that is a piece of meat that I do not want to overcook, I have decided to do a "deconstructed" cranberry port pot roast in which I will bake the ribeye separately and prepare a port wine reduction to use as the base for cooking the pearl onions and cranberries, along with some beef broth and then making a wonderful gravy from the liquid. My Thanksgiving menu will be deviled eggs, assorted olives and crudite, roast ribeye, my l/c spaetzle w/port gravy, cranberries & pearl onions, broccoli, and a piece of cranberry velvet pie. I might even open a bottle of red wine and have a glass. What are you doing to keep the holiday low carb friendly?

Well Im having the traditional turkey, cranberry/blueberry muffins made with carbquick and flaxmeal ( sooo delicious ), green beans, some type of greens ( collards or kale or spinach, im gonna steal Henry's idea of deviled eggs ( thanks Henry ), and one of my favorite desserts lc macaroons. And may surprise the kids with a higher carb dessert fav of theirs ( wont mention it on here ). Gonna keep it rather simple. Dont want tons of leftovers.

I haven't decided, myself. Like Henry, I'm doing dinner for two, and I'm not sure I want several pounds of leftover turkey. LOL!

Still have time to think about it.

I'm doing the traditional Thanksgiving turkey since my kids are still little and A gets hyped-up over the holiday because they talk about it at school. I have a LC sausage-sage stuffing recipe that even DH loves (he hates stuffing) and I'll probably do a LC green bean casserole and another baked veggie dish - probably a "just like twice baked potatoes" cauliflower recipe, along with the turkey. May try a new portabello mushroom gravy recipe I just got in my email, too. Will probably make a LC pumpkin dessert for myself, and will make a traditional pumpkin pie for the kids & DH. Oh, and regular cranberry sauce for A, too. He LOVES cranberry sauce. So, it's kind of a mix at my house, but I'm OK with that because it's always that way.

Forgot to add.... for the leftover turkey, I debone and remove the skin, then grind it up in my food processor. If there's a lot, I freeze half for another day. With the other half I make turkey salad: add mayo and chopped pickles (this is DH's favorite way to have turkey). I like to add more stuff to my turkey salad (celery, chopped eggs, onion, dill,...) but DH prefers just mayo & pickles, so no biggie.

Wow Henry that idea sounds excellent! I've never tried cooking a whole ribeye. My niece bought a whole beef fillet on sale for $39+. Her husband works night shift and decided to surprise her with dinner. yes he cooked the entire fillet in the crockpot all day long. It's the kind of story that they'll be laughing about for years, once his swelling goes down. I took the easy way out this year and just gave my sister $25 towards dinner. I'll maybe bring a low carb s.f. dessert since my Ds is diabetic, anyone have a quick easy suggestion? last year I broughtkey lime cheesecake.

Rob, here is a very simple recipe from Linda Sue's website. I made this for my birthday last month. It has a nice flavor and texture, though don't freeze it as it has a watery texture when it thaws. You can adjust the spice combination to suit your taste.

JODY'S PUMPKIN BAKE
8 ounces cream cheese, softened
5 eggs
1/2 cup granular Splenda or equivalent liquid Splenda
15 ounce can pumpkin
1/2 tablespoon pumpkin pie spice
1 teaspoon cinnamon

Put the cream cheese in a medium mixing bowl and beat with an electric mixer until smooth. Add the remaining ingredients and beat well. Pour into a 6x8" greased glass baking dish. Bake at 350º about 40 minutes or until the center feels firm and a knife inserted in the center comes out relatively clean. Cool, then chill before serving.

Makes 4-6 servings

With granular Splenda:
Per 1/4 Recipe: 342 Calories; 27g Fat; 14g Protein; 14g Carbohydrate; 5g Dietary Fiber; 9g Net Carbs
Per 1/6 Recipe: 228 Calories; 18g Fat; 9g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs

With liquid Splenda:
Per 1/4 Recipe: 330 Calories; 27g Fat; 14g Protein; 11g Carbohydrate; 5g Dietary Fiber; 6g Net Carbs
Per 1/6 Recipe: 220 Calories; 18g Fat; 9g Protein; 7g Carbohydrate; 3g Dietary Fiber; 4g Net Carbs

Jody said she gets four large servings out of this but I thought I'd save a few carbs and serve smaller pieces. This is very good and I think the spices and sweetness are just right. I tasted it while still warm and it was nice like that but it made the whipped cream melt. After trying it, I think that making this into just four servings is a bit over the top. Six servings is more realistic. I will probably make this again for Thanksgiving instead of a pumpkin pie although this tastes pretty much like pumpkin pie. Despite the cream cheese it is nothing like a cheesecake.

Henry, Mada - thank you both very much! I'll have to choose Jody's Pumpkin bake since you both recommended it unbeknownst to each other. And it certainly sounds easy! It will save me from having a piece of the "real" pumpkin pie that I always end up cheating with a slice.

I'm the only one who likes pumpkin here, but I might make Jody's Pumpkin Bake just for me Trader Joes's has wonderful canned organic pumpkin this year.

... well, a mutant was exactly what I asked for. The butcher was stocking the meat department as I was perusing the regular sized turkeys. He asked if I was looking for something special and I told him, "yes." "I want a miniature turkey ... about 7-8 lbs." He said, "well, I think I can help."

... and, the die was cast.

So, it will be turkey, lc stuffing (couple of slices lc bread, celery, onion, mushroom, nuts, etc), giblet gravy, cranberry sauce, roasted sprouts, braised asparagus & artichoke mix and tiramisu for desert. ... and, of course, football.

Just the right size for a small gathering maggie! I bought an oven stuffer roaster chicken that was over 8 lbs a couple weeks ago. ate for days on that.

That Jody's pumpkin bake was really good! Like pumpkin pie only muchj much lighter.

I agree, Rob. Jody's pumpkin bake was good. Today I was still wanting more pumpkin dessert, but alas, it was gone. So I decided to try making the Libby's Famous Pumpkin Pie (the recipe on the label) subbing cream for the evaporated milk and subbing Splenda for the sugar. Let me just say oh my.......... I didn't even put a crust on this one. Just popped it in the oven at 425º for 15 minutes, then 350º for 35 - 40 minutes. Just had a piece and it was still a little warm. Mmmmmmmm. I LOVE the Libby's recipe, so this is what I'm going to make from now on. May add a pecan crust next time, but may not.
