Default German Baked Eggs

I love this egg casserole, and I thought I'd post it now because it's great to make in advace when you have company or Thanksgiving to prepare, plus the leftovers are fantastic and quick to heat up when you want to shop early on black Friday!

German Baked Eggs

12 eggs
1 stick butter, melted
2 c. cottage cheese
16 oz. Monterey Jack cheese, shredded
1 t. baking powder
1/4 c. flour substitute*

Crack eggs into a large bowl and beat. Add remaining ingredients and mix until incorporated. Pour into a greased 9 x 13" pan and bake at 350º for 35 - 40 min. or until top is brown and eggs are set. Let stand for 10 minutes before slicing.

* I used Mini Carb brand Zero Carb Baking Mix this time around. It made it a little more dense because it was a bake mix and not just a flour. I kind of liked it that way. You could also leave out the flour altogether, which I've done, and all that really happens is the eggs don't rise quite as high.

I ran the numbers through fitday and here's what I got for the whole recipe:

Fat: 298 g
Carbs: 27 g
Protein: 249 g

(I left the baking powder out and my flour sub because it had 0 carbs.)

For 12 servings, you get 2.25 g carbs per serving, for 8 servings, you get 3.375 g carbs per serving.

How about adding some browned onions & peppers for an omelet casserole, and perhaps some mushrooms? Or diced bacon or ham.

I have added chopped sausage links once and bacon bits once, but never veggies. But they sound good too. This is a pretty versatile casserole, so I'd say go for it!
