Default Cranberry Velvet Dream Pie

Last year I saw a recipe for Cape Cod Cranberry Velvet Pie. I altered the recipe to make it l/c and posted it. That recipe was tasty. However, because it was a frozen pie, it suffered from the typical fate of l/c ice creams in that it was rock hard when frozen. As a result, it had to be thawed for a significant period before eating. This year, I decided to modify my strawberry cream pie recipe to see if I could produce a cranberry pie with the same texture as my strawberry cream pie. I am very pleased with the result. I decided to name this:

Cranberry Velvet Dream Pie

2 small packages sugar-free cranberry Jello
2 cups heavy cream
1 8oz package cream cheese (softened)
¼ cup a/s (I used liquid splenda)
1 recipe George Stella’s Cranberry Relish (chilled)

Dissolve jello in 1 and ½ cups boiling water. Stir in 2/3 cup cold water. Place in freezer for 15-20 minutes (just until it begins to gel).

When jello is ready, whip cream until stiff, then combine a/s and cream cheese and beat until smooth. Fold cream cheese into whipped cream, then fold mixture into jello. Fold cranberry relish into the mixture. Pour into 10” ready to eat l/c/pie shell and chill until firm (about 2 hours). Any extra filling can be refrigerated in a covered container for a nice treat.

Cranberry Relish
1 12oz bag fresh or frozen cranberries
1 cup water
1 cup sugar equivalent a/s (I used liquid splenda)
1 tsp grated orange zest (I used the zest of 1 orange)
Bring water and a/s to a boil, add cranberries and simmer for about 10 minutes, until the berries pop. Add orange zest, stir and remove from heat. Cool and then place in a covered container and refrigerate.

I was going to try this recipe, but........I can NOT find any sf cranberry jello!
Sooooooooo...........I'm thinking a complimentary flavor to the cranberries might be sf raspberry?...or perhaps sf orange?(which would not give it that beautiful festive look).
Hmmmmm....I see an experiment on the horizon! LOL!

Shelly, I think raspberry sf jello would be the better choice, both for the festive holiday color and for the complimentary flavor it would add w/o masking the delightful orange counterpoint provided by the orange zest in the cranberry relish.

Thanks, Henry. I think the raspberry will win out and this will most likely be Christmas Day dessert in an almond or pecan crust. Can hardly wait!

Funny....I have trouble finding cranberry jello here, too, but have noticed it's more often available in the independent grocery stores than the "big name" ones.

If you can't find cranberry flavored jello, perhaps you could use a cranberry flavored drink mix (try the Great Value brand at WalMart) and mix it with gelatin to make your own cranberry gelatin. Ocean Spray also has a diet cranberry drink, has 2 carbs per cup, you could heat it and dissolve plain gelatin in it. Might be worth a try.
