Hot & Cheesy Chicken Wraps![]() 1 lb. boneless skinless chicken, cut into long thick slices (finger size) Sliced Jalapeno Pepper from a Jar (21 slices) and 1 tbsp of juice 2-3 tbsp finely diced onion (negligible carbs) 1/2 Cup Finely Shredded Cheddar/Monteray Jack Cheese Seasonings: Salt & Pepper to Taste,1/2 tsp poultry seasoning or Mrs. Dash Table Blend Iceberg Lettuce Leaves (Large pieces to be used as a wrap) 1 tbsp of olive oil 2 tbsp of water In a pan heat olive oil over med heat, add onion and cook for 2-3 minutes until translucent. Add chicken and sprinkle with seasonings, cook 2 minutes uncovered while stirring, add 2 tbsp of water and cook covered an additional 7-10 minutes or until chicken is done in inside, stirring occasionally. Remove lid and allow most of juice to evaporate. Add about 10 of the Jalapeno pepper rings and 1 tbsp of the juice and stir. Remove from heat and top with remaining jalapenos and 1/2 cup of cheese allowing it to melt. Take large pieces of lettuce and using it like a wrap, fill it with 1/3 of the chicken recipe. Fold closed and serve. Can serve with a side of ranch - don't forget to add those carbs to the total below though. Recipe makes 3 servings. Total Carbs = 5; Carbs per serving about 2 I adapted this recipe from a favorite family restaurant in town - they serve chicken like this in a piece of soft flatbread with lettuce, tomato and a side of ranch. Divine! |

| When you're able to have more carbs, try this with a low carb tortilla or wrap. Sounds great! |

| Sounds delicious! I'll probably use the lettuce wraps, since I haven't found a low carb tortilla or wrap that was friendly enough to my BGL's. Thanks, Slimmer! (BTW, I find that the outer leaves of Romain lettuce is great for things like this, too - I use them for BLT's & tuna salad "sandwiches." The rib part of the leaf, keeps it nice & stiff, and the softer part of the leaf wraps around the contents nicely.)
