Default Hash brown squash O'Brien

Awhile back I saw a recipe for making hash browns using Delicata squash. (6 net carbs per 3/4 cup serving). However, I could not find that squash in the stores here. About a month ago, I found some on sale and bought a couple of small ones to try. Yesterday, I got around to trying them. I decided that since I had a green pepper that I needed to use before we left town, I would try to make a potato O'Brien type dish but using the squash instead of potato. I was very pleased with the result and will look for this squash again.

2 small Delicata squash
6 strips bacon
1 green pepper
3/4 cup diced onion

Peel the squash, cut in half and scrape out the seeds. dice the squash into about a 1/4 inch dice. Fry the bacon until crisp and remove from the pan. Add the greep pepper and onion to the pan and saute in the bacon dripings for 1 minute. Add the diced squash and saute over medium high heat for 10-15 minutes stirring occasionally as the squash takes on a nice brown color. Cut the bacon into small pieces, return to the pan, toss and serve. I will use the leftovers for another meal and also plan on trying them with some eggs for breakfast.

Henry, since I wasn't familiar with the appearance of the delicata squash, I found a picture. Your recipe sounds great, thanks for sharing.
