Default Hot Chicken Salad

This dish turns out like a casserole and it's definitely one that can be called comfort food. I've been making this for my family forever. Recommended for OWL and maintenance.

HOT CHICKEN SALAD

4 C. cooked, cubed chicken
2 C. sliced celery
2 tsp. grated onion (or desired amount; can be omitted)
1/2 C. sliced almonds
1-1/2 C. mayonnaise (can use lite mayo if desired)
2 T. fresh lemon juice
1/4 tsp. garlic powder (or desired amount; can be omitted)
desired amount of black pepper
Shredded cheddar cheese (I sprinkle enough on top to cover the ingredients).

Mix all ingredients except shredded cheddar. Pile lightly into 9x13 glass baking dish, top with cheese. Bake at 425 for 15-20 minutes.

My wheels are turning here....a tossed salad to go with, and maybe some steamed broccoli, and I think that would work for me!

I decided to change the amount of garlic powder. Some people may not be as passionate about garlic.

Susie, this looks good. Is the cooking time enough to take the crunch out of the celery? DW does not like her veggies too crunchy.

Henry, the celery comes out crunchy. So you may want to sauté it a bit first before adding it to the chicken mixture, or zap it in the microwave for 2-3 minutes.
