Default Robin's sausage dip for a crowd

My sister Robin makes the best dips I have ever eaten and this one is one of my favorites!

Robin's sausage Dip


ingredients:
1 pound Hot Italian sausage
1 pound sweet Italian sausage
4 packages cream cheese
4 cans Rotel tomatoes with green chilis

Soften cream cheese

Brown sausage (remove from casings if not using bulk sausage) drain fat.

Mix together in crockpot and add tomatoes. Start on high for 15 minutes and switch to low setting. Let cook for 3 or 4 hours. I've seen my sister make this in a pot in the oven, cooking it for about an hour stirring it occasionally. It can also be done on top of the stove on a low heat. as you can see this is easily scaled down for smaller crowds. 1/2 pound of sausage meat per each pack of cream cheese and each can of Rotel. serve with veggies or pork rinds.

serves about 16 normal people (or 4 like me )
less than 5 carbs per serving.

This looks like it would be good served over some Dreamfields elbow macaroni. Maybe with a bit of shredded cheddar on top.

Never thought about this recipe over pasta. sounds excellent!
Sadly, My sister and her Significant other will be going out of town for superbowl sunday. I don't dare make this dip just for me and the furballs.
