Buying hamburger

"Low Carb Cooking" at Low Carb Diet Support: "When I buy hamburger I've always bought the leanest that I can. But, when I was looking on a different lc website one of the ladies said that she always buys a high fat hamburger ...."

Default Buying hamburger

When I buy hamburger I've always bought the leanest that I can. But, when I was looking on a different lc website one of the ladies said that she always buys a high fat hamburger in order to get more flavour. She says the fat cooks out anyway. What do some of you think? Lean or not?

Donna, no question that fat is what gives flavor to meat, especially beef. Yes, to an extent most of the fat cooks out and you can certainly drain the rest off it off. You can even cook the ground beef and rinse it, I've heard of people doing that who are truly conscience of their fat consumption.

Something to consider, you usually pay less (unless you're shopping a great sale) for ground beef than you would ground chuck, round, etc. But, you're going to cook off a lot more fat, which in the end makes your cheaper meat more expensive.

Here's a handy lean/fat ratio chart for ground beef:
  • Ground beef : 75 percent lean / 25 percent fat
  • Ground chuck : 80 to 85 percent lean / 15 to 20 percent fat
  • Ground round : 85 to 90 percent lean / 10 to 15 percent fat
  • Ground sirloin : 90 to 92 percent lean / 8 to 10 percent fat
In the end, I think it's really six of one, half-dozen of another and a matter of personal preference or your grocery budget.

I generally go for chuck. I think that tastes best.

Then again, I love fat. (In these parts, ground beef seems to have more water in it than fat.)

I live in Canada and we don't get a choice for ground sirloin or chuck etc. It's just lean or regular hamburger. Maybe I'll have to try some regular and see what the difference is in taste. Thanks guys.

Can you ask the meat department to grind a specific piece of beef for you? I have done that more than once. Get a nice chuck roast and have them grind it for you. Sometimes you can get cuts like that on sale for less than the ground beef.

My DH who claims to be an expert on beef says that he loves the George Foreman grill because he buys beef that is cheap and full of fat then it still has it's flavor as it drips out with extra calories. He doesn't like the lean stuff because he says all the flavor gone. I'm a frugal spender so love this!
