| Re: Coconut Flour Pound Cake Just a thought here. Having used coconut flour, I was struck by how "dry" an ingredient it is. I wonder if the newest carb counts on the package aren't correct. If they defat the product (say, to produce coconut oil) before rendering to flour, that would turn in a higher carb count than unfractionated coconut. Food for thought.
