| Linda, I hope you like it, but be sure to recalculate the carb count according to the new numbers. Rob said his package shows the old amounts, so I know I'm not going crazy! You could also make pound cake with almond flour. I have before, and it's also very good. |

| Just a thought here. Having used coconut flour, I was struck by how "dry" an ingredient it is. I wonder if the newest carb counts on the package aren't correct. If they defat the product (say, to produce coconut oil) before rendering to flour, that would turn in a higher carb count than unfractionated coconut. Food for thought.
